Method
Cajun Grilled Shrimp
Prepare shrimp and marinade
Pat the shrimp dry with paper towels. In a medium bowl combine 2 tbs olive oil, 1 tbs lemon juice, 1.5 tsp Cajun seasoning, 1/2 tsp smoked paprika, 1 tsp minced garlic, 1/2 tsp salt and 1/4 tsp black pepper. Whisk until smooth.
Add the shrimp to the bowl and toss to coat evenly. Let marinate at room temperature for 10–15 minutes (or up to 30 minutes refrigerated). Do not marinate longer than 30 minutes to avoid texture changes.
Grill shrimp
Preheat a grill or grill pan over medium-high heat (about 400°F / 200°C). Oil the grates lightly. Place shrimp on the hot grill in a single layer and cook 2–3 minutes per side until opaque and slightly charred—total 4–6 minutes depending on size. Remove from heat and set aside to rest 2 minutes.
Pico de Gallo
Add 1 tbs lime juice, 1/4 tsp salt and 1/8 tsp black pepper. Stir to combine and taste; adjust salt or lime as desired. Let sit 5–10 minutes for flavors to meld.
Tortillas & Assembly
Warm the 3 flour tortillas: heat a skillet over medium heat, brush lightly with 1 tsp olive oil or butter, and warm each tortilla 20–30 seconds per side until pliable and slightly browned. Keep warm wrapped in a clean towel.
To assemble tacos, divide the grilled shrimp evenly among the 3 tortillas (4 shrimp per tortilla). Top each with generous spoonfuls of pico de gallo.
Finish with optional garnishes: squeeze a lime wedge over each taco and drizzle with hot sauce or crema if using. Serve immediately.
