Sea Snails & Marinade
Clean and blanch snails
If not already cleaned, rinse the baby sea snails under cold running water, removing grit and any loose bits. Bring a medium pot of water to a gentle boil. Add 1 teaspoon salt. Briefly blanch the snails 1–2 minutes to tighten the flesh and remove surface impurities. Drain and transfer to an ice bath to stop cooking. Drain again and set aside.
Marinate
Place the drained snails in a bowl. Add 2 tablespoons fresh lime juice, 1 teaspoon sea salt, and 1 teaspoon freshly ground black pepper. Toss gently to coat and let sit while you prepare the broth (10–15 minutes).
Aromatic Coconut Broth
Prepare aromatics
Bruise the lemongrass stalks by pounding with the back of a knife and then smash the white lower parts with the flat side so the fibers open. Thinly slice 1 inch fresh ginger and thinly slice the shallot. If using, slice the Thai red chili lengthwise and remove seeds for less heat.
Sweat shallots and aromatics
In a medium saucepan, heat 1 tablespoon vegetable oil over medium heat. Add the sliced shallot and sauté 2–3 minutes until softened and translucent but not browned. Add the sliced ginger and bruised lemongrass pieces and continue to cook 1–2 minutes until fragrant.
Build the broth
Pour in 1 cup low-sodium chicken or seafood stock and 1 cup coconut cream. Stir to combine, then add 1 teaspoon palm sugar (or light brown sugar) and 1.5 tablespoons fish sauce. Bring the mixture to a gentle simmer (do not boil vigorously) and let it infuse for 6–8 minutes so the lemongrass and ginger flavor the broth.
Adjust seasoning
Taste the broth and adjust balance: add more fish sauce for saltiness, a squeeze of lime for brightness, or a pinch more sugar if it tastes too sharp. Remove the lemongrass pieces and discard (or finely chop them if tender and add back). Keep the ginger slices if you want more heat.
Finish & Serve
Combine snails with broth
Add the marinated, blanched snails to the simmering coconut broth and heat gently for 2–3 minutes just to warm through and let flavors meld. Do not overcook — snails should be tender. If using Thai chili, add slices now and simmer 30–60 seconds to release color and heat.
Add herbs
Stir in the chopped coriander stems and most of the coriander leaves, reserving a small handful for garnish. Add the thinly sliced green onion if using. Remove from heat.
Serve
Ladle the coconut sea snails and broth into warm bowls. Garnish with remaining coriander leaves and a lime wedge on the side. Serve immediately with steamed rice or crusty bread to soak up the sauce.
