Edamame

Method

Edamame

1

Prepare steaming setup

Pour 500 ml water and 1 tablespoon kosher salt into a medium saucepan. Insert a steamer basket so the water does not touch the basket bottom. Bring water to a rolling boil over high heat.

2

Steam edamame

Add 1 cup frozen edamame (in pods) to the steamer basket in a single layer. Cover and steam for 5–7 minutes until pods are bright green and tender when one pod is tested. If using very large pods, steam up to 8 minutes.

3

Drain

Remove the steamer from heat, carefully drain and transfer the steamed edamame to a large heatproof bowl. Reserve about 1 tablespoon of any residual steaming liquid to adjust sauce if needed.

Garlic Lemon Pepper Sauce

4

Melt butter and infuse

In a small skillet over medium heat, melt 2 tablespoons unsalted butter with 1 tablespoon olive oil. Add 2 tablespoons finely minced garlic and sauté 30–45 seconds until fragrant but not browned (watch closely to avoid bitterness).

5

Build the sauce

Lower heat to medium-low. Stir in 1 teaspoon smoked paprika, 1 teaspoon coarsely cracked black pepper, 1/4 teaspoon cayenne pepper (adjust for mild/medium/spicy: 0 tsp for mild, 1/8–1/4 tsp for medium, 1/2 tsp for spicy), and 1/2 teaspoon brown sugar. Cook 20 seconds to bloom the spices.

6

Finish flavors

Remove skillet from heat. Stir in 1 tablespoon fresh lemon juice, 1 teaspoon soy sauce, 1/2 teaspoon toasted sesame oil, and 1 teaspoon lemon zest. Taste and season with fine sea salt to taste (start with 1/8 tsp). If sauce seems too thick, add up to 1 tablespoon reserved steaming liquid to loosen.

Tossing & Serving

7

Pour the hot garlic lemon pepper sauce over the steamed edamame in the heatproof bowl. Using tongs or a spoon, toss thoroughly so the pods are evenly coated. Taste one pod and adjust seasoning: add a pinch more salt, more cracked pepper, or extra cayenne/red pepper flakes for heat.

8

Transfer to a serving bowl. Garnish with 1 tablespoon chopped fresh parsley or cilantro if using and serve immediately with lemon wedges and optional crushed red pepper flakes on the side for extra heat.
