prepare and roast eggplants

Preheat oven to 400°F (200°C). Halve the eggplants lengthwise. Score the flesh in a diamond pattern, about 1/4 inch deep, without cutting through the skin. Brush the cut surfaces with 2 tablespoons olive oil and sprinkle with 1 tsp kosher salt and 1 tsp black pepper. Place cut-side down on a foil-lined baking sheet and roast 30–35 minutes until flesh is tender and edges caramelize. Remove and let cool slightly.

Once cool enough to handle, carefully scoop out most of the flesh leaving a 1/2-inch border so shells hold their shape. Reserve scooped flesh (about 1 to 1 1/2 cups) for folding into the chickpea filling. Brush the inside of shells lightly with remaining 1 tbsp olive oil and set on a baking dish for filling.

Just before serving or baking the assembled dish, warm lemon juice and chopped parsley over the finished stuffed eggplants as a bright finishing drizzle.

Heat 1 tbsp olive oil in a skillet over medium heat. Add diced onion and a pinch of salt; sauté 5–6 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant.

Add drained chickpeas, reserved roasted eggplant flesh (roughly chopped), diced roma tomatoes, and tomato paste to the pan. Stir to combine.

Season with ground cumin, smoked paprika, ground coriander, 3/4 tsp salt, and 1/2 tsp black pepper. Pour in 1/4 cup vegetable broth or water, reduce heat to medium-low and simmer 6–8 minutes until tomatoes soften and flavors meld. Mash roughly with a fork or potato masher so mixture is chunky but cohesive. Stir in 1 tbsp chopped cilantro or parsley. Taste and adjust seasoning.

Spoon the warm chickpea-tomato filling into the prepared eggplant shells, dividing evenly between the two halves.

Saffron rice

Place saffron threads in 2 tbsp hot water and let steep 5–10 minutes to release color and aroma.

In a small saucepan, melt 1 tbsp butter or warm 1 tbsp olive oil over medium heat. Add the rinsed basmati rice and toast 1 minute, stirring. Add 1.5 cups water, 1/2 tsp salt, and the saffron with its soaking liquid. Bring to a gentle boil, then reduce heat to low, cover, and simmer 12–15 minutes until water is absorbed. Remove from heat and let stand covered 5 minutes. Fluff with a fork.

Portion saffron rice alongside or used as a bed for the stuffed eggplant when plating.

Crispy sunchokes

Heat 1 tbsp olive oil in a small nonstick skillet over medium-high heat. Add thinly sliced sunchokes in a single layer and cook 4–6 minutes, stirring occasionally, until edges brown and pieces become crisp. Alternatively, roast on a sheet at 425°F (220°C) for 12–15 minutes tossing once. Season with 1/4 tsp salt and 1/4 tsp pepper and set aside on paper towel to drain.

Use the crispy sunchokes as a crunchy garnish scattered over the stuffed eggplant just before serving.

Hummus & garnish

Spread about 1/4 cup of prepared hummus onto each serving plate or spoon a dollop next to the eggplant. Drizzle with 1/2 tbsp extra-virgin olive oil and sprinkle optional toasted pine nuts or pistachios.

Place the stuffed eggplant halves on the hummus or rice bed. Top each stuffed half with a small handful of crispy sunchokes and scatter microgreens or extra parsley. Finish with a squeeze of lemon juice if desired and an extra drizzle of olive oil.

Serve immediately while rice and filling are warm.
