Mussels
Prep mussels
Rinse the PEI mussels under cold water. Discard any that are cracked or remain open when tapped. Remove beards with a small knife and scrub shells if needed. Pat dry with towel.
Season and hold
Toss mussels with 1 tbs olive oil, 1 tsp salt and 1/2 tsp black pepper in a bowl. Set aside in the refrigerator while you make the sauce (do not leave more than 30–45 minutes).
Cook mussels in sauce
When the sauce is simmering (see sauce steps), add the seasoned mussels directly to the simmering tikka masala sauce in a large, deep skillet or pot. Cover and cook over medium-high heat for 5–7 minutes, shaking pan or stirring once halfway. Mussels are done when shells open. Discard any that remain closed after 7 minutes.
Tikka Masala Tomato Curry Sauce
Bloom spices & tomato paste
Stir in 2 tbs tomato paste and cook 2 minutes. Add garam masala (2 tsp), cumin (1 tsp), coriander (1 tsp), smoked paprika (1 tsp), turmeric (1/2 tsp), and red chili powder (1/4 tsp). Cook, stirring, for 1 minute to bloom the spices.
Add tomatoes & simmer
Pour in the 14 oz crushed tomatoes and 1/2 cup water or stock, stir to combine, and bring to a gentle simmer. Reduce heat to medium-low and simmer uncovered 10–12 minutes to thicken and develop flavor, stirring occasionally.
Finish sauce with dairy & seasoning
Stir in 1 cup heavy cream (or coconut cream) and 1 tsp sugar or honey. If using, whisk in 1/4 cup plain yogurt off the heat to prevent splitting. Simmer gently 3–4 minutes to meld flavors. Taste and adjust salt (add up to the 1 tsp called for) and heat level as desired.
Add cilantro
Stir in 1/4 cup chopped fresh cilantro just before adding mussels. Keep sauce at a gentle simmer — it should be hot and bubbling but not rapidly boiling when mussels are added.
To Serve
Combine & finish
Add the mussels to the simmering tikka masala sauce, cover, and cook 5–7 minutes until shells open. Remove pan from heat. Spoon mussels and sauce into a shallow serving bowl. Sprinkle additional chopped cilantro (2 tbs) over top and serve with lemon wedges.
Warm naan
Warm 4 pieces of naan in a 350°F (175°C) oven for 3–5 minutes or on a skillet for 30–60 seconds per side until warm and slightly charred. Serve alongside the mussels to mop up the sauce.
Serve
Offer lemon wedges at the table. Encourage guests to dip naan into the sauce and enjoy mussels directly from shells. Leftover sauce can be strained and reserved; discard any unopened mussels.
