Acai Base
Prepare ingredients
Measure frozen acai puree and frozen banana. Slightly thaw acai for 1–2 minutes at room temperature if extremely rock-solid so your blender can process it.
Blend
In a high-speed blender, combine frozen acai puree (300 g), frozen banana (1 cup), unsweetened almond milk (180 ml), honey or agave (1 tbs), and vanilla extract (1/2 tsp). Blend on high using short pulses, scraping down the sides as needed, until mixture is thick and smooth. The texture should be scoopable — thicker than a smoothie but not rock solid. If too thick, add almond milk 1 tablespoon at a time; if too thin, add a few frozen banana pieces or a few ice cubes.
Toppings
Prepare fruit and toppings
Rinse blueberries (1/2 cup) and hull & slice strawberries (1/2 cup). If using, slice optional banana (1/2 cup). Have homemade granola (3/4 cup), cacao nibs (1 tbs), coconut flakes (1.5 tbs), and chia seeds (1 tsp) ready.
Assemble bowl
Spoon the blended acai into a large serving bowl, smoothing the top with the back of the spoon. Arrange toppings in sections or scatter them as you like: spoon granola (3/4 cup) on one side, add blueberries and sliced strawberries in separate clusters, place optional banana slices, sprinkle cacao nibs (1 tbs) and coconut flakes (1.5 tbs) over the top, and finish with a light dusting of chia seeds (1 tsp) if using.
Finishes
Final touches
Drizzle with honey or agave (1 tsp) if desired and garnish with a couple of fresh mint leaves. Serve immediately so the granola stays crunchy.
Storage note
If not eating right away, store the acai base in an airtight container in the freezer for up to 24 hours; let thaw in the refrigerator or at room temperature until scoopable. Keep granola and fresh fruit separate and assemble just before serving.
