Prepare oven and bed

Preheat the oven to 450°F (230°C). Spread the crushed rock salt in an even layer on a rimmed baking sheet large enough to hold the oyster shells; this creates a stable bed so oysters remain level while baking.

Shuck the oysters, reserving their liquor. Place each oyster in its half shell on the salt bed so they sit level. Set aside on the baking sheet.

Fennel-Spinach Filling

Cook aromatics and vegetables

In a medium skillet over medium heat, melt 2 tablespoons butter. Add the minced shallot and cook 1–2 minutes until softened and translucent but not browned. Add the sliced fennel and cook 2–3 minutes until it begins to soften. Add the minced garlic and cook another 30 seconds until fragrant.

Wilt spinach and deglaze

Add the chopped spinach to the skillet and cook, stirring, until wilted (about 1–2 minutes). Pour in 1 tablespoon Pernod and carefully let it reduce for about 30–45 seconds, scraping brown bits from the pan. Allow most of the alcohol aroma to cook off.

Finish filling

Reduce heat to low and stir in 1/4 cup heavy cream and 2 tablespoons grated Parmesan. Add 1/2 teaspoon lemon juice, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Simmer gently until slightly thickened, about 1–2 minutes. Taste and adjust seasoning. Remove from heat and let cool slightly so the mixture will sit on oysters without running off.

Spoon approximately equal portions of the fennel-spinach mixture onto each oyster in its shell (about 1 tablespoon filling per oyster). Reserve any remaining juices to optionally spoon over oysters.

Breadcrumb-Parmesan Topping

Prepare topping

In a small bowl, combine 3 tablespoons fresh breadcrumbs, 1 tablespoon grated Parmesan, 1 teaspoon melted butter, and 1 teaspoon chopped parsley. Mix until evenly moistened.

Sprinkle about 1 teaspoon of the breadcrumb mixture over each filled oyster, creating an even crusting layer.

Baking & Finish

Bake oysters

Place the baking sheet with oysters in the preheated 450°F oven and bake until the topping is golden and the filling is bubbling, about 8–10 minutes. For a browned finish, switch the oven to broil for the last 1–2 minutes, watching closely to prevent burning.

Remove oysters from the oven. If any oyster liquor escaped, spoon it back into the shell. Garnish each oyster with a tiny sprinkle of extra grated Parmesan and a few microgreens or chopped parsley.

Serve immediately on the salt bed with lemon wedges alongside. Squeeze a touch of lemon over each oyster just before eating.
