    Prepare romaine

    Trim and core romaine hearts, then rinse and dry thoroughly. Chop or tear into bite-sized pieces to equal about 6 cups. Chill in refrigerator while preparing the rest.

    Assemble

    Place the chilled romaine in a large serving bowl. When dressing is ready, toss romaine with most of the dressing (reserve 1–2 tbsp for garnish) until leaves are evenly coated. Sprinkle 2 tablespoons of the grated Grana Padano over the dressed salad and gently toss to combine. Top with toasted panko and the remaining tablespoon of Grana Padano. Serve with lemon wedges alongside for optional brightening.

Creamy Caesar dressing

    Make dressing

    In a medium bowl, mash the minced anchovy fillets with the minced garlic and a pinch of salt until a paste forms. Add mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, and fresh lemon juice. Whisk until smooth. Slowly drizzle in 2 tablespoons extra-virgin olive oil while whisking to emulsify. Season with kosher salt (start with 1/2 tsp), and freshly ground black pepper. Taste and adjust acidity with more lemon juice or salt as needed. Chill for 10 minutes to let flavors meld; the consistency should be creamy and scoopable. Reserve 1–2 tablespoons of dressing for garnish if desired.

Toasted panko

    Toast panko

    Heat a small skillet over medium heat and add 1 tablespoon unsalted butter and 1 teaspoon olive oil. When butter has melted and is shimmering, add 3 tablespoons panko breadcrumbs. Stir constantly for 2–4 minutes until breadcrumbs are golden brown and fragrant. Sprinkle in 1 teaspoon garlic powder and 1/4 teaspoon salt during the last 30 seconds, toss to combine, then remove from heat and transfer to a bowl to cool. Keep an eye on them — panko can burn quickly.
