Baked Salmon

    Preheat and prepare fish

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and lightly oil it to prevent sticking.

    Season salmon

    Pat the salmon fillets dry with paper towels. In a small bowl combine 2 tbs olive oil, minced garlic, chopped dill, juice of half the lemon (reserve remaining half for broccoli), 1 tsp salt, and 1/2 tsp black pepper. Brush or spoon the mixture evenly over the top of each fillet (skin side down).

    Bake

    Place fillets on the prepared baking sheet spaced apart. Bake in the preheated oven for 10–14 minutes, depending on thickness (about 10 minutes for 1-inch thick fillets). Salmon is done when it flakes easily with a fork and internal temperature reaches 125–130°F (52–55°C) for medium; cook a few minutes longer for well-done.

    Finish

    Remove from oven and let rest 2 minutes. Squeeze a little of the remaining lemon over the fillets and garnish with additional chopped dill or parsley, if desired.

GF Mushroom Rice

    Sauté aromatics and mushrooms

    While oven is preheating, heat 1 tbs olive oil or butter in a medium saucepan over medium heat. Add the finely chopped onion and sauté 3–4 minutes until translucent. Add the sliced mushrooms and cook 4–6 minutes until they release moisture and begin to brown. Stir in 1 tsp minced garlic and cook 30 seconds until fragrant.

    Toast rice

    Add the 1.5 cups uncooked rice to the pan and stir to coat with oil and mushroom mixture. Toast the rice 1–2 minutes, stirring, to develop a nutty flavor.

    Simmer

    Pour in 3 cups water or stock, add 1 tbs gluten-free soy sauce/tamari, 1/2 tsp salt, and 1/4 tsp black pepper. Bring to a gentle boil, then reduce heat to low, cover tightly, and simmer 15–18 minutes (follow rice package if different) until liquid is absorbed and rice is tender.

    Finish rice

    Remove from heat and let stand, covered, 5 minutes. Fluff with a fork, stir in chopped parsley, adjust seasoning to taste, and keep warm until serving.

Broccoli

    Prepare and roast

    Toss 1 lb broccoli florets with 1 tbs olive oil, 1/4 tsp salt, and 1/8 tsp black pepper on a rimmed sheet pan. Spread in a single layer. Roast in the same oven as the salmon at 400°F (200°C) for 12–15 minutes until tender-crisp and edges are slightly browned. You can roast them during the last 12–15 minutes of the salmon's cooking time (place tray on different rack).

    Remove broccoli from oven, squeeze the remaining lemon half over the florets if using, and toss. Taste and adjust seasoning.
