Trim and season

Trim any excess fat from the chicken thighs and pat them dry with paper towels. Place the thighs in a bowl or shallow dish. Sprinkle kosher salt, black pepper, garlic powder, and smoked paprika evenly over the chicken. Drizzle with 1 tablespoon olive oil and rub the seasoning into the meat. Let rest 10–15 minutes at room temperature or refrigerate up to 2 hours for deeper flavor.

Bring to room temperature

If refrigerated, remove chicken 20 minutes before cooking so it comes closer to room temperature for even cooking.

Fire Honey Glaze

Combine glaze ingredients

In a small bowl, whisk together the honey, sriracha, gochujang, soy sauce, rice vinegar, grated ginger, minced garlic, sesame oil, and crushed red pepper flakes until smooth and uniform.

Prepare cornstarch slurry

In a separate small cup, mix 1 teaspoon cornstarch with 2 tablespoons cold water until dissolved. Set aside — you'll add this near the end to thicken the glaze if needed.

Cook & Glaze Chicken

Heat pan

Place a large skillet or cast-iron pan over medium-high heat. Add 1 tablespoon neutral oil and let it shimmer but not smoke.

Sear chicken

Add the seasoned chicken thighs to the hot pan in a single layer, skinless-side down. Sear without moving for 4–5 minutes, until a deep golden-brown crust forms. Flip and sear the other side 3–4 minutes. Internal temperature should be about 150–155°F (65–68°C) at this stage.

Reduce heat and add glaze

Reduce heat to medium-low. Pour the prepared fire honey glaze evenly over the chicken. Spoon some glaze over the top of the thighs so they are well coated.

Finish cooking in glaze

Continue cooking, spooning glaze and turning the thighs every 2 minutes, for 4–6 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the glaze has concentrated slightly.

Thicken glaze if needed

If the glaze is too thin, stir the reserved cornstarch slurry to recombine and pour it into the pan while stirring the glaze continuously. Cook 1–2 minutes until sauce thickens and becomes glossy. If glaze gets too thick, add 1 tablespoon water to loosen.

Finish & Serve

Rest and glaze

Remove the chicken from the pan to a cutting board and let rest 5 minutes. Spoon any remaining glaze from the pan over the thighs while resting to amplify flavor and shine.

Slice and plate

Slice the thighs against the grain into 1/2-inch strips (or serve whole). Arrange on a platter or individual plates.

Garnish

Scatter toasted sesame seeds and sliced green onions over the chicken. Add chopped cilantro and lime wedges if using. Serve immediately with rice, steamed vegetables, or a crisp salad.
