Chicken & Marinade
Prepare and marinate chicken
If chicken breasts are thick, butterfly or pound to an even 1/2-inch thickness. In a bowl, whisk together 2 tbs olive oil, 1 tbs lemon juice, minced garlic, smoked paprika, cumin, oregano, 1 tsp kosher salt and 1/2 tsp black pepper. Add chicken, coating both sides. Marinate 15–30 minutes at room temperature or up to 4 hours refrigerated.
Grill chicken
Place chicken on the hot grill. Cook 4–6 minutes per side, until internal temperature reaches 165°F (74°C) and exterior has nice grill marks. Remove to a cutting board and rest 5 minutes, then slice into 1/2-inch strips.
Sauce / Finishing
Make the sauce
While the chicken rests, whisk together 1/2 cup Greek yogurt, 2 tbs mayonnaise, 1 tsp Dijon mustard, 1 tsp honey, 1/4 tsp salt, 1/4 tsp black pepper and optional 1 tsp hot sauce until smooth. Taste and adjust seasoning. Refrigerate until assembly.

Prepare vegetables and cheese
Wash and shred romaine; thinly slice tomato, red onion and cucumber. Grate or measure shredded cheese and set all components within reach for assembly.
Grill / Finish
Assemble wraps
Lay a warmed tortilla flat. Spread about 1.5–2 tbs of the yogurt sauce down the center. Layer 1 cup shredded romaine, a few tomato slices, a few cucumber slices, some red onion, 1/4 cup shredded cheese and a generous portion (about 4 oz) of sliced grilled chicken.
Fold and toast (optional)
Fold the bottom edge over the filling, fold in the sides, and roll tightly. If you prefer a warm, slightly crisp exterior, heat 1 tsp oil or melt 1 tbs butter in a skillet over medium heat. Place seam-side down and press gently; cook 1–2 minutes per side until golden and the seam seals. Cut on the diagonal.
Serve
Serve immediately with extra sauce on the side and lemon wedges if desired.
