Rinse the basmati rice under cold water until the water runs mostly clear (3–4 rinses). Drain in a fine-mesh sieve and let sit 10 minutes to remove excess surface moisture.

Bloom the saffron: place saffron threads in a small heatproof bowl and pour 2 tablespoons hot water over them. Let steep for 10 minutes, then gently crush the threads with the back of a spoon to release color and aroma.

In a medium saucepan, melt the butter with 1 tablespoon olive oil over medium heat. Add the drained rice and gently toss to coat for 1–2 minutes; this helps keep the grains separate and adds flavor.

Add 2 1/4 cups water, 1 teaspoon salt and the bay leaf (if using). Stir once, then bring to a gentle boil over medium-high heat.

Once boiling, reduce heat to low, cover tightly, and simmer undisturbed for 12–15 minutes, or until the water is absorbed and rice is tender.

Remove from heat and let the rice rest, covered, for 8–10 minutes. Remove the bay leaf. Pour the bloomed saffron (including liquid) over the rice and gently fluff with a fork to distribute color and aroma evenly.

Grilled Beef Kofta

If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning. Metal skewers require no soaking.

Place the ground beef in a large bowl. Add the finely grated onion, minced garlic, chopped parsley, ground cumin, ground coriander, ground cinnamon, smoked paprika, 1 teaspoon kosher salt and 1/2 teaspoon black pepper.

Mix gently but thoroughly with your hands or a spoon until the mixture is uniform—do not overwork, which can make the kofta tough. Taste a small piece by cooking a 1/2 teaspoon patty in a skillet and adjust seasoning if needed.

Divide the meat into 6 equal portions (about 2.5–3 oz each). With slightly wet hands, shape each portion around a skewer into an elongated, slightly tapered sausage shape about 4–5 inches long and 1–1.25 inches thick. Press firmly so the meat adheres to the skewer.

Brush each kofta lightly with 1 tablespoon olive oil to help with browning and prevent sticking.

Preheat an outdoor grill or grill pan to medium-high (about 400°F / 200°C). Oil the grates or pan lightly.

Grill the kofta 3–4 minutes per side, turning to develop even char and cook through. Internal temperature should reach 160°F (71°C) for ground beef. Total cooking time ~8–10 minutes depending on thickness.

Remove from heat and let rest on a plate for 3–4 minutes before removing from skewers (or serve on skewers). This preserves juices and texture.

Grains Bowl Components & Garnish

Prepare the yogurt sauce by mixing 1/2 cup plain Greek yogurt with 1 tablespoon lemon juice, 1 tablespoon extra-virgin olive oil and 1/4 teaspoon salt. Stir until smooth. Optionally fold in half of the chopped mint for freshness.

Toss the mixed greens with the cherry tomatoes and cucumber in a bowl. Lightly dress with a drizzle (about 1 teaspoon) of olive oil and a small pinch of salt, or leave undressed to allow individual plating control.

Assemble the bowl: place about 1 cup saffron rice in each bowl, add a handful (about 1/2 cup) of dressed greens and a grilled beef kofta (or two smaller pieces) on top or to the side.

Spoon 1–2 tablespoons of the yogurt sauce over the kofta or serve on the side. Sprinkle toasted pine nuts or chopped pistachios (about 2 tablespoons) and the remaining chopped mint over the bowl. Finish with a light dusting of sumac if using.

Serve immediately while kofta are warm. Provide lemon wedges on the side for extra brightness if desired.
