Method
Saffron Rice
Rinse and soak rice
Rinse 2 cups basmati rice under cold water until the water runs clear to remove excess starch. Drain and let sit 15 minutes.
Bloom saffron
Place 1/2 tsp saffron threads in a small heatproof bowl and pour 2 tablespoons boiling water over them. Let steep 10–15 minutes to release color and aroma. Stir in 1/4 cup whole milk after steeping to temper color and add creaminess.
Cook rice
In a medium saucepan, melt 2 tbsp butter with 1 tbsp olive oil over medium heat. Add the drained rice and toast, stirring gently, for 1–2 minutes until just fragrant (do not brown). Add 2 1/2 cups water, 1 tsp salt and 1 bay leaf. Bring to a gentle boil, then reduce heat to low, cover tightly and simmer 12–15 minutes until liquid is absorbed.
Carved Lamb (or Beef)
Prepare marinade and marinate meat
In a bowl combine 1/2 cup plain yogurt, 2 tbsp olive oil, 4 minced garlic cloves, 2 tbsp lemon juice, 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp smoked paprika, 1/2 tsp black pepper, 1 tsp kosher salt, and chopped fresh mint and parsley (2 tbsp each). Mix until smooth. Rub this marinade all over the 1.5 lb lamb leg or beef tri-tip, place in a zip-top bag or covered dish, and refrigerate for at least 2 hours, preferably overnight for best flavor.
Bring to room temperature and preheat
Remove the meat from the refrigerator 30–45 minutes before cooking to come closer to room temperature. Preheat oven to 400°F (200°C) or prepare a medium-high grill (425–450°F).
Sear and roast (or grill)
For oven method: Heat a large ovenproof skillet over medium-high heat with 1 tbsp oil. Sear the meat 2–3 minutes per side until browned. Transfer skillet to preheated oven and roast until internal temperature reaches 130°F (54°C) for medium-rare lamb/beef (about 12–20 minutes depending on thickness). For grill method: Sear over direct high heat 2–3 minutes per side, then move to indirect medium heat and cook until 130°F internal. Adjust to desired doneness (135–140°F for medium).
Rest and carve
Transfer meat to a cutting board and tent loosely with foil. Rest 10–15 minutes to let juices redistribute. Slice thinly against the grain into 1/8–1/4 inch slices for tender, easy-to-eat pieces.
Grain Bowl Components & Assembly
Prep grains and vegetables
If you haven't already, cook 1 cup farro or freekeh according to package instructions and cool slightly. Have 1/2 cup roasted chickpeas ready (store-bought or roast canned chickpeas at 400°F for 20–30 minutes with oil and spices). Dice 1/2 cup cucumber, halve 3/4 cup cherry tomatoes, and drain 1/4 cup pickled red onion. Toast 2 tbsp pine nuts or almonds in a dry skillet over medium heat until golden, about 2–3 minutes, shaking frequently.
Add vegetables and garnishes
Top bowls with diced cucumber, halved cherry tomatoes, roasted chickpeas, pickled red onion, and a sprinkle of crumbled feta (about 1 tbsp per bowl). Scatter toasted nuts over each bowl and add a pinch of salt and black pepper to taste.
