Prep chicken and lettuce

If chicken is not cooked, poach or grill 2 small breasts until internal temp reaches 165°F (about 12–15 minutes depending on thickness). Let cool slightly and shred or slice to yield 2 cups. Chop Romaine lettuce and set aside.

Assemble

Lay 1 large flour tortilla flat. Spread 3 tbs Caesar dressing evenly over the center of the tortilla, leaving 1-inch edge. Add 1 cup shredded chicken, 1 cup chopped Romaine, and 1/2 cup grated Parmesan. Sprinkle 1/2 tsp cracked black pepper over filling.

Roll and finish

Fold the two short edges in, then roll tightly from one long edge to enclose filling. Repeat for second wrap. Heat a nonstick skillet over medium with 1/2 tbs olive oil or butter, place wraps seam-side down and grill 1–2 minutes per side until lightly golden and warmed through. Cut in half and serve.

Veggie Hummus Wrap (makes 2 wraps)

Prep vegetables

Thinly slice cucumber and red bell pepper. Toss shredded carrots and baby greens with 1 tsp fresh lemon juice and 1/4 tsp salt in a small bowl to lightly dress and season.

Assemble

Lay 1 whole-wheat tortilla flat. Spread 3 tbs hummus evenly over the center. Layer 1/2 cup cucumber slices, 1.5 tbs shredded carrot, 1/2 cup mixed baby greens, and 1/4 cup red bell pepper on top of the hummus.

Roll and finish

Fold short edges in and roll tightly from the long edge. Repeat for the second wrap. Optionally heat skillet over medium with remaining 1/2 tbs olive oil and toast each wrap 1–2 minutes per side until golden. Cut in half and serve.

Side A: Crispy Fries (serves 2)

Preheat oven to 425°F (220°C) or heat oil in a skillet for pan-frying. Toss cut potatoes with 2 tbs vegetable oil, 1/2 tsp salt and 1/4 tsp paprika until evenly coated.

For oven: spread fries in a single layer on a baking sheet lined with parchment and bake 20–25 minutes, flipping once halfway, until golden and crisp. For skillet: cook in a single layer over medium-high heat, turning occasionally, about 12–15 minutes until crisp and cooked through.

Season again lightly with salt to taste while hot and serve alongside wraps.

Side B: Mixed Fruit Cup (serves 2)

Combine 1 cup strawberries, 1 cup pineapple chunks, and 1 cup grapes in a bowl. Drizzle 1 tsp honey (optional) and 1 tsp fresh lime juice over fruit and gently toss to combine.

Portion into two small cups or bowls and chill briefly if desired.

Assembly & serving

Plate 2 wraps (one Chicken Caesar, one Veggie Hummus) halved for easier eating. Add a portion of crispy fries and a portion of mixed fruit cup per serving. Serve immediately while wraps and fries are warm.

Estimated make-ahead: prepare components (chicken, chopped veg, hummus spread) up to 24 hours in advance; assemble and toast within 30 minutes of service for best texture.
