In a large bowl, combine chickpea flour, water, grated potatoes, sliced onion, chopped spinach, cilantro, green chili, cumin powder, coriander powder, and salt. Mix until a thick batter forms.

In a deep frying pan, heat the oil over medium-high heat until hot but not smoking.

Fry the Pakoras

Using a spoon, drop spoonfuls of the batter into the hot oil. Fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

In a small bowl, mix together yogurt, tahini, lemon juice, garlic, and salt to create a creamy sauce.

Warm pita bread and layer with fried pakoras. Drizzle with shawarma sauce and add toppings like lettuce, tomatoes, and pickles.
