Prepare Béchamel Sauce

In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually add milk while whisking constantly until thickened. Stir in salt and pepper to taste.

Assemble the Sandwich

Spread Dijon mustard on one side of each slice of sourdough. Layer Schwab's country ham, half of the Gruyère cheese, and the other slice of bread to form a sandwich.

Cook the Sandwich

In a skillet, melt a bit of butter over medium heat. Place the sandwich in the skillet and cook until golden brown on both sides, about 3-4 minutes per side.

Fry the Egg

In another skillet, heat a small amount of butter and fry the egg sunny-side-up until the white is set but the yolk remains runny.

Combine and Serve

Remove the sandwich from the skillet, top with béchamel sauce, the remaining Gruyère cheese, and the sunny-side-up egg. Serve with a side of citrus greens.
