Cook the Chorizo

In a skillet over medium heat, cook the chorizo until it is browned and fully cooked, about 5-7 minutes. Break it up with a spatula as it cooks.

Scramble the Eggs

In a bowl, whisk the eggs until well combined. Pour the eggs into the skillet with the chorizo and stir gently until the eggs are cooked to your desired doneness.

Prepare the Tortilla Strips

In a separate pan, lightly fry the corn tortilla strips until they are crispy. Remove from heat and drain on paper towels.

Assemble the Burrito

Lay a large flour tortilla flat and add a portion of the chorizo and egg mixture, followed by crispy tortilla strips, queso fresco, pico de gallo, and a drizzle of avocado crema.

Add Diablo Sauce

Add diablo sauce to taste, then fold the sides of the tortilla and roll it up tightly.

Cut the burrito in half and serve with extra pico de gallo and avocado crema on the side.
