Gumbo

    Prepare proteins

    Trim any excess fat from the chicken thighs and cut into 1-inch pieces. Slice the Andouille or kielbasa into 1/4-inch rounds. Pat proteins dry and season lightly with 1/2 teaspoon of the salt and 1/4 teaspoon black pepper.

    Make a dark roux

    In a heavy-bottomed pot or Dutch oven over medium-low heat, combine 1/4 cup neutral oil and 1/2 cup all-purpose flour. Stir constantly with a wooden spoon or spatula so the flour browns evenly. The roux will first smell nutty and turn golden, then amber, then chocolate-brown. This takes about 15–20 minutes on medium-low. Watch carefully to avoid burning; if it darkens too quickly, lower the heat. When it reaches a deep peanut-butter to chocolate color, remove from direct heat for the next step.

    Build the gumbo base

    Add the diced onion, bell pepper and celery (the 'holy trinity') directly to the hot roux. Return to medium heat and cook, stirring, for 5–7 minutes until the vegetables soften and pick up color. Add the minced garlic and cook 30–60 seconds until fragrant. Stir in 1 tablespoon tomato paste and cook 1 minute to combine.

    Deglaze and simmer

    Slowly whisk in 3 cups chicken stock, a little at a time, to incorporate the roux into the liquid and avoid lumps. Add the bay leaf, thyme, Worcestershire sauce, hot sauce, remaining salt (1/2 tsp), remaining black pepper, and cayenne if using. Bring to a gentle simmer.

    Cook proteins

    Add the chicken pieces and sausage slices to the simmering gumbo. Simmer gently, uncovered, for 20–25 minutes until the chicken is cooked through and flavors meld. If using lump crab meat, fold it in during the last 3–4 minutes to heat through gently (note: crab ingredient is optional and set to 0 cups by default). Taste and adjust seasoning.

    Finish and thicken

    If you like a slightly thicker stew, simmer 5 additional minutes uncovered. Remove and discard the thyme sprig and bay leaf. Optionally stir in 1/4 teaspoon file powder off heat to avoid stringiness; it will thicken and add earthy flavor.

Rice & Garnish

    While the gumbo simmers, prepare the rice. Rinse 1/2 cup rice under cold water until the water runs clear. In a small saucepan bring 1 cup water to a boil with 1/2 tablespoon butter and a pinch of salt. Add the rice, reduce to low, cover and cook 15 minutes without lifting the lid. Remove from heat and let sit covered 5 minutes, then fluff with a fork. Stir in sliced green onions and chopped parsley; keep warm.

Serve

    Divide the cooked rice between 2 bowls. Ladle gumbo over the rice. Garnish with additional sliced green onions and parsley if desired, and pass hot sauce at the table. Serve with 2 dinner rolls or crackers, provide 2 bowls, utensils and a serving spoon. Estimated portion: about 2 generous bowls.
