    Cook rice

    Bring 3 cups chicken stock to a simmer in a medium saucepan. Add 1 cup uncooked long-grain rice, stir, cover, reduce heat to low and cook until tender, about 15–18 minutes. Remove from heat and let sit covered 10 minutes, then fluff with a fork and set aside to cool slightly.

    Brown pork

    Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the cubed pork shoulder, season lightly with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper, and brown on all sides until cooked through (6–8 minutes). Remove pork to a plate and let rest 5 minutes, then pulse in a food processor 6–8 quick pulses until coarsely ground (you want small pieces, not a paste).

    Sauté aromatics

    In the same skillet, lower heat to medium and add 2 tablespoons butter and remaining 1 tablespoon vegetable oil. Add 1 cup chopped onion, 1/2 cup chopped green pepper, 1/2 cup chopped celery and sauté until softened and translucent, about 6–8 minutes. Add 4 minced garlic cloves and cook 30–45 seconds until fragrant.

    Combine ingredients

    Return the pulsed pork to the skillet with the aromatics. Stir in cooked rice, 1 pound peeled crawfish tails (roughly chopped if large), 2 tablespoons chopped parsley, 3 tablespoons sliced green onions, 2 teaspoons Cajun seasoning, 1 teaspoon smoked paprika, 1 teaspoon hot sauce, 1/2 teaspoon black pepper, and remaining 1/2 teaspoon kosher salt. Cook, stirring, for 2–3 minutes to marry flavors. Remove from heat and let cool 15 minutes.

    Finish texture

    Transfer the cooled mixture to a large bowl or the bowl of a food processor. Add 1/4 cup ice water and 1/2 cup fine breadcrumbs. Pulse the mixture in short bursts until the mixture is uniformly coarse and sticky enough to hold together — aim for a coarse, paste-like, but still slightly grainy texture. Taste and adjust seasoning with additional Cajun seasoning or salt if desired.

Stuffing, Poaching & Finishing

    Prepare casings

    If using natural hog casings, soak them in warm water for 30 minutes, then flush them with fresh water until clear. Slide soaked casing onto your sausage stuffer or a funnel attachment, leaving a tail about 8 inches to tie. Lightly brush the inside of the casing with 1 tablespoon vegetable oil to prevent sticking.

    Fill the stuffer with the boudin mixture and pipe into the prepared casings, filling gently to avoid air pockets. Aim for links about 4–5 inches long. Twist or tie with cooking twine between links to portion. Do not overstuff — the casing should be filled snugly but not tight.

    Poach gently

    Bring 8 cups water to a gentle simmer in a large pot (do not boil rapidly). Add the boudin links in batches, poaching 6–8 minutes until the filling is firm and the casing is set. Maintain a low simmer to prevent bursting. Remove links with a slotted spoon and transfer to an ice bath (4 cups ice + water) for 5 minutes to stop cooking and firm up.

    Dry & rest

    Remove links from the ice bath, pat dry with paper towels, and let rest on a rack for 10–15 minutes. At this stage you can refrigerate for up to 24 hours before finishing, or proceed to sear/grill.

    Finish (optional sear or grill)

    To serve with a flavorful exterior, heat a skillet over medium-high heat with 1 tablespoon vegetable oil or preheat a grill. Sear the poached links, turning occasionally, until browned and slightly crisp, about 3–5 minutes total. Alternatively, grill over medium heat for 5–7 minutes, turning to get even char. Serve hot.

    Slice ends to expose the filling or serve whole. Garnish with additional chopped parsley and sliced green onions if desired. Offer hot sauce or Creole mustard alongside.
