Crawfish Boudin

    Prep rice for stuffing

    Rinse 1 cup uncooked long-grain rice under cold water until water runs clear. Combine rice with 2 cups chicken broth or water and 1/2 tsp salt in a small saucepan. Bring to a boil, reduce to low, cover and simmer 15–18 minutes until tender. Remove from heat and let sit covered 5 minutes, then fluff with a fork.

    Cook the aromatics

    While rice cooks, heat 1 tablespoon vegetable oil and 1 tablespoon butter in a large skillet over medium heat. Add finely chopped onion, green bell pepper, and celery. Sauté 6–8 minutes until softened and translucent. Add minced garlic and cook 30–45 seconds until fragrant.

    Combine crawfish mixture

    Add the peeled crawfish tails to the skillet and cook 2–3 minutes until they turn opaque and heat through. Stir in the cooked rice, 2 tablespoons butter, 2 tablespoons chopped parsley, 2 teaspoons Cajun seasoning, 1 teaspoon smoked paprika, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1 teaspoon hot sauce (if using). Taste and adjust seasoning. Cook another 2 minutes, stirring to combine and to let flavors meld.

    Optional finishing

    If you prefer a smoother boudin texture, pulse half of the mixture in a food processor 3–4 times and then stir it back into the skillet. Keep warm while you prepare the rest of the meal.

Rice

    If you made rice for the boudin, reserve that portion to serve with the plate. If you prefer freshly cooked plain rice for serving, rinse 1 cup rice and cook with 2 cups water or chicken broth, 1/2 tsp salt and 1 tablespoon butter. Bring to a boil, simmer covered 15–18 minutes, then let rest 5 minutes and fluff.

Beans (choose one)

    Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add 1/2 finely chopped onion and 1 minced garlic clove; sauté 3–4 minutes until soft. Add a 15 oz can of your chosen beans (drained and rinsed) and 1/2 tsp Cajun seasoning, 1/4 tsp salt and 1/4 tsp black pepper. Stir and simmer 6–8 minutes to warm and let flavors combine. Mash lightly with the back of a spoon if you prefer a creamier texture. Keep warm until serving.

Green Salad (with Italian dressing)

    In a large bowl combine 6 cups mixed salad greens, 1 cup halved cherry tomatoes, 1/2 sliced cucumber, and 1/4 thinly sliced red onion. Toss with 1/2 cup Italian dressing just before serving to avoid soggy greens.

    Warm rolls in a 350°F (175°C) oven for 5–8 minutes or until warmed through. Serve 4 rolls with 2 tablespoons butter for spreading. Plate each serving with a generous scoop of crawfish boudin, a portion of rice (about 1/2 cup cooked per person), a portion of beans (about 1/2 cup), a green salad portion, and a roll. Garnish with sliced green onions and a lemon wedge; offer extra hot sauce at the table.
