Marinated Chicken

Prepare and marinate

Pat chicken pieces dry. In a large bowl combine yogurt, ginger-garlic paste (2 tbs), red chili powder (2 tsp), turmeric, coriander powder, garam masala, black pepper, 1.5 tsp salt, lemon juice, slit green chilies, chopped coriander and mint. Mix thoroughly to coat chicken. Cover and marinate for at least 2 hours, preferably overnight in the refrigerator.

Fry the marinated chicken

Heat 1/2 cup oil in a deep skillet over medium-high heat. Remove excess marinade from chicken pieces (reserve marinade). Fry chicken in batches without overcrowding until golden brown and cooked about 80% through, about 8-10 minutes per batch depending on size. Transfer to a tray lined with paper towels to drain. Reserve oil for gravy if desired.

Rice & Aromatics

Rinse basmati rice under cold water until water runs clear, then soak for 20-30 minutes. In a large pot bring 1.2 liters water to a rolling boil. Add 1.5 tsp salt, cardamom, cloves, bay leaves, cinnamon stick and peppercorns. Drain soaked rice and add to boiling water. Cook rice until it is 70-80% done (grains still firm in center), about 6-8 minutes depending on grain age. Drain rice in a colander and set aside.

Biryani Gravy & Layering

Prepare the gravy base

In a heavy-bottomed pot or Dutch oven (that has a tight-fitting lid) heat 3 tbs ghee or oil over medium heat. Add the sliced onions and sauté, stirring frequently, until golden brown and caramelized — about 12-15 minutes. Remove half the caramelized onions and set aside for garnish.

To the remaining onions in the pot add 1 tbs ginger-garlic paste and sauté 1 minute until fragrant. Add chopped tomato and cook until oil separates and tomatoes soften, about 5-6 minutes. Stir in red chili powder (1 tsp), coriander powder (1 tsp) and biryani masala (1 tbs). Cook 2 minutes.

Add the reserved marinade and the fried chicken pieces to the gravy. Mix gently to coat. Lower heat, add 1/2 cup yogurt, and simmer uncovered for 8-10 minutes so flavors meld and chicken finishes cooking. Taste and adjust salt if needed. Stir in chopped coriander and mint (0.25 cups each).

Prepare saffron (optional)

If using saffron, soak threads in 2 tbs warm milk for 5-10 minutes to release color and aroma.

Layer the biryani

Spread half the par-cooked rice evenly over the chicken gravy in the pot. Sprinkle half of the reserved fried onions, half of the chopped coriander and mint, and a few drops of saffron milk. Layer the remaining rice on top. Garnish with remaining fried onions, herbs and saffron milk. Optionally drizzle 1 tbs ghee over the top for extra aroma.

Dum (final steam)

Cover the pot with a tight-fitting lid. For a firmer seal, place a kitchen towel under the lid or seal with dough if available. Cook on very low heat for 25-30 minutes (use a heat diffuser or heavy pan under the pot to avoid burning). This slow steam (dum) finishes cooking the rice and infuses flavors.

After 25-30 minutes, turn off heat and let biryani rest, covered, for 10 minutes. Gently fluff the rice from the edges to mix layers without breaking the grains. Serve hot with lemon wedges and raita.

Optional Condiments

Serve biryani with lemon wedges and boondi or cucumber raita on the side to balance heat and aroma.
