Method
Prepare Mango
If using fresh mango
Peel and cube 1 large ripe mango (or 2 small). Remove the pit and measure about 1 cup of mango flesh. For very fibrous mangoes, scrape flesh close to the pit and discard tough fibers.
If using canned or frozen mango pulp, thaw if frozen and measure 1 cup. Stir to a smooth consistency before blending.
Blend Lassi
Pour in 1/4 cup milk (or water) to adjust thickness. If you prefer a thinner lassi, add up to another 1/4 cup liquid in small increments.
Add 4 ice cubes to the blender for a chilled, slightly frothy texture. If you prefer not to use ice, chill the mango and yogurt beforehand.
Blend on high for 30–45 seconds, or until completely smooth and slightly frothy. Taste and adjust sweetness; add up to 1 tablespoon honey or more sugar if desired, then blend 5–10 seconds to combine.
Serve & Garnish
Pour the mango lassi into two serving glasses (about 1/2 cup each) or one large glass depending on portion size.
Garnish with a pinch of ground cardamom and a sprinkle of chopped pistachios or almonds. Add a mint leaf on top if desired.
Serve immediately while cold. Stir before drinking if it sits, as some separation can occur.
