Method
Prep and Marinate
Clean and score fish
Pat the fish fillets dry with paper towels. If using whole steaks, make 2–3 shallow diagonal slashes on each side to help the marinade penetrate.
Make marinade
In a mixing bowl combine lemon juice, turmeric, salt, red chili powder, garam masala, ground coriander, ground cumin, ginger paste, garlic paste and whisked yogurt. Mix until smooth.
Add flours and coat
Add gram flour (besan) and rice flour to the marinade and stir into a thick but spreadable paste. The flours help the coating adhere and crisp during frying.
Marinate fish
Coat each fillet thoroughly with the marinade, making sure it gets into the slashes. Place in a covered container or tray, refrigerate and marinate for 30–60 minutes. If time is short, marinate at least 15 minutes.
Frying
Remove excess marinade: lift fillets from the bowl allowing any loose marinade to drip off. You want a fairly thin even coating that will crisp without burning.
Fry the fish: working in batches (do not overcrowd the pan), gently lay fillets in the hot oil. Fry for 3–5 minutes on the first side until golden brown and crisp, then carefully flip and fry 2–4 minutes on the other side until cooked through. Cooking time depends on thickness: fish should flake easily and reach an internal temp of ~60°C (140°F).
Optional crispy curry leaves: in the last batch, add curry leaves to the oil for 10–20 seconds until crisp; remove with a slotted spoon and drain on paper towels.
Drain: transfer cooked fish to a wire rack or paper towels to drain excess oil. Sprinkle freshly ground black pepper and chopped cilantro while hot.
Serve
Arrange fish on a serving platter with lemon wedges and crisped curry leaves. Serve immediately while hot and crisp alongside steamed rice, lemon wedges, or as an appetizer with chutney or ketchup.
