Batter (Fermented Rice & Urad Dal)
Soak
Rinse the parboiled rice and optional raw rice until water runs clear. Rinse the urad dal and fenugreek seeds separately. Soak rice and poha together in a bowl with enough water to cover (about 3 cups) for 4–6 hours. Soak urad dal and fenugreek seeds in 1–2 cups of water for 4–6 hours.
Grind Urad Dal
Drain urad dal but reserve the soaking water. In a wet grinder or high-speed blender, grind the urad dal and fenugreek seeds with about 1/2 cup of the reserved water to a smooth, airy paste. Add small amounts of water as needed; total grinding should take 8–12 minutes in a wet grinder to incorporate air.
Grind Rice
Drain rice and poha. Grind the rice and poha with about 1/2–3/4 cup water to a slightly coarse, smooth batter (a bit grainy is fine for uttappam). Combine batches as needed. The rice batter should be thicker than crepe batter but pourable.
Mix & Ferment
In a large bowl, combine the ground rice and urad dal batters. Add additional reserved soaking water to reach a batter consistency similar to pancake batter (about 300–400 ml water total across grinding). Mix thoroughly using hand or spoon to incorporate air. Cover the bowl and ferment in a warm place 8–12 hours (overnight) until doubled and slightly bubbly. After fermentation stir in 2 tsp salt. If short on time, you can skip fermentation and use the batter fresh, but texture will be less fluffy.
Topping & Mix-ins
Prepare Vegetables
Thinly slice the yellow onion into small rings or finely chop (about 1 cup). Finely chop the green chillies (remove seeds for milder heat). Chop spring onion greens or cilantro. Dice the tomato and grate the carrot if using. Finely chop curry leaves. Combine onion, chillies, tomato, carrot, spring onions/cilantro, grated ginger, green chilli paste (if using), and black pepper in a small bowl and toss to mix.
Adjust Seasoning
Taste a small amount of the vegetable mix and adjust salt or chilli amount if needed. Keep this mixture handy next to your cooking surface.
Tempering & To Cook
Cook Uttappams
Stir the fermented batter gently. Scoop about 1/2 cup batter for each uttappam (serves 6 with 1/2 cup each). Pour the batter onto the hot tawa and spread minimally into a thick pancake about 5–6 inches (do not spread thin like dosa). Drizzle 1/2 tsp oil around the edges and a little on top. Immediately sprinkle a generous 2–3 tbsp of the onion-chilli-vegetable mixture evenly over the top and gently press it into the batter with the back of a spoon so it adheres.
Cover & Cook Through
Cover the pan with a lid and cook on medium-low for 3–5 minutes until the underside is golden brown and the top shows cooked batter (no raw batter on top). Uncover and check the underside; if edges are sticking, loosen with a spatula and add another tiny drizzle of oil.
Flip & Finish
Carefully flip the uttappam and cook the topped side for 1–2 minutes, pressing lightly so vegetables make contact and cook. If using, add a small knob (1/2 tsp) of ghee or butter on top after flipping to enhance flavor. Cook until both sides are golden and vegetables softened but still slightly crisp.
Repeat
Repeat with the remaining batter, adding oil as needed. For best results, keep the pan at even medium-low heat to cook through without burning.
