Marinade
Marinate chicken
Place the 1 lb chicken pieces in a bowl. Add 1/4 cup whisked yogurt, 1/4 tsp turmeric, 1/2 tsp red chili powder and 1/2 tsp salt. Mix thoroughly so every piece is lightly coated. Cover and refrigerate for 20–30 minutes (or up to 2 hours).

Prepare dry mix
In a large mixing bowl combine 1 cup gram flour, 2 tbsp rice flour, 1 tbsp cornstarch, 1 tsp baking powder, 1 tsp salt, 1 tsp red chili powder, 1 tsp turmeric powder, 1/2 tsp garam masala, 1/2 tsp amchur, and 1/2 tsp freshly ground black pepper. Whisk to evenly distribute spices and break up any lumps.
Make batter
Slowly add about 3/4 cup cold water to the dry mix while stirring with a whisk or spoon to form a thick, clingy batter. Batter should be thick enough to coat chicken pieces but not pasty — aim for a dropped-consistency where spooned batter falls in ribbons. Adjust with up to 2 tbsp more water if too thick, or 1–2 tbsp more gram flour if too thin.
Coat marinated chicken
Remove chicken from the refrigerator. Using your hands or tongs, add chicken pieces to the batter and toss until each piece is fully coated. Let coated pieces rest 5–10 minutes so the batter adheres.
Frying
Heat oil
Pour 3 cups oil into a deep, heavy-bottomed pan or Dutch oven to a depth of about 2–2.5 inches. Heat over medium-high to reach 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of batter into the oil — it should sizzle and rise slowly without browning instantly.
Fry in batches
Carefully lower beaten-batter-coated chicken pieces into the hot oil in a single layer without overcrowding. Fry in batches of about 8–10 pieces depending on pan size. Maintain oil temperature around 325–350°F (160–175°C). Fry for 5–7 minutes, turning occasionally, until the exterior is golden-brown and an instant-read thermometer inserted into a larger piece reads 165°F (74°C). Smaller pieces may cook faster; adjust time accordingly.
Drain and rest
Using a slotted spoon, transfer fried pakodas to a wire rack set over a baking sheet or to paper towels to drain excess oil. Let rest 2–3 minutes before serving — this keeps them crisp.
To Serve
Leftovers: keep in a single layer in an airtight container in the refrigerator for up to 2 days. Re-crisp in a 400°F (200°C) oven for 6–8 minutes.
