Soak

Rinse the dried chickpeas well. Place them in a large bowl and cover with plenty of cold water. Soak overnight (8–12 hours) until plump. If short on time, quick-soak by bringing chickpeas and water to a boil for 2 minutes, then remove from heat and soak 1 hour.

Cook

Drain soaked chickpeas and transfer to a large pot or pressure cooker. Add 6 cups fresh water and 1.5 tsp kosher salt. If using a pressure cooker, cook on high for 12–15 minutes (about 3–4 whistles) until tender. If boiling on stovetop, simmer 45–60 minutes until soft. Reserve 1 cup of the cooking liquid; drain the rest. For firmer texture, retain slightly less water.

Temper spices and cook aromatics

Heat 3 tbs vegetable oil in a large deep skillet or kadhai over medium heat. When hot, add 1 tsp cumin seeds and let them sizzle for 10–15 seconds until fragrant. Add 1 cup finely chopped onion and sauté, stirring occasionally, until golden brown, about 8–10 minutes. Add 1 tbs grated ginger, 4 minced garlic cloves, and 1 slit green chili; cook 1–2 minutes until raw aroma disappears.

Tomato base

Stir in 1.5 cups tomato puree and 1 tbs tomato paste (if using). Cook the mixture, stirring often, until oil separates from the masala and tomatoes reduce slightly, about 8–10 minutes. This develops deeper flavor and removes raw tomato taste.

Spices

Add ground spices

Lower heat to medium-low. Add 1/2 tsp turmeric, 2 tsp coriander powder, 1 tsp cumin powder, 1/2 tsp red chili powder, and 1 tsp salt (adjust to taste). Cook and stir for 2–3 minutes so spices bloom in the oil and combine with the tomato-onion mixture. If the masala becomes too dry, add 1–2 tbs water to prevent sticking.

Combine & Simmer

Add chickpeas

Add the cooked chickpeas to the skillet with the masala. Pour in about 1 cup reserved cooking liquid (or adjust to desired gravy thickness). Stir to combine and bring to a gentle simmer.

Simmer to meld flavors

Simmer uncovered on low-medium heat for 10–15 minutes, stirring occasionally, so the chickpeas absorb the spices and the sauce thickens. Mash about 1/2 cup of chickpeas lightly against the side of the pan with the back of a spoon — this helps thicken the gravy and creates body.

Finish seasoning

Stir in 1 tsp garam masala and 1 tsp dry mango powder (amchur) or 1 tsp lemon juice. Taste and adjust salt and heat. If you prefer a richer finish, stir in 1 tsp butter or ghee now.

Finishing & Garnish

Turn off heat and sprinkle 1/4 cup chopped fresh cilantro over the channa masala. Serve hot with lemon wedges on the side for squeezing over individual portions.
