Okra (Bhindi)
Prepare and dry
Wash the okra and dry thoroughly with a clean kitchen towel or paper towels. Ensure no moisture remains — wet okra will become slimy when cooked. Trim the stems and cut into 1/2-inch pieces.
Lightly salt and pan-fry
Heat 3 tbs oil in a large nonstick or cast-iron skillet over medium-high heat. When hot, add the chopped okra in a single layer (cook in two batches if needed so pieces aren't crowded). Sprinkle 1 tsp salt over the okra. Fry, stirring occasionally, until pieces are browned and slightly crisp on edges, about 8–12 minutes. Remove cooked okra to a bowl and set aside. The goal is to reduce sliminess and add texture; do not overcook to mush.
Masala Base
Sauté aromatics
Add the thinly sliced onion (1 cup) and a pinch of salt. Sauté, stirring occasionally, until the onion softens and starts to turn golden, about 6–8 minutes. Add the slit/chopped green chili, grated ginger (1 tsp) and minced garlic (1 tsp). Cook for 1–2 minutes until raw smell disappears.
Add tomatoes and spices
Add the chopped tomato (1 cup) and cook until it softens and releases moisture, about 4–6 minutes. Stir in 1 tsp ground coriander, 1 tsp ground cumin, 1 tsp turmeric powder, and 1 tsp red chili powder. Cook the spice-tomato mixture, stirring frequently, for 3–4 minutes until oil separates slightly from the masala and the mixture is thick.
Combine & Finish
Combine okra with masala
Return the pan-fried okra to the skillet and gently fold into the masala. Reduce heat to medium-low. Sprinkle 1 tsp dry mango powder (amchur) or add 1 tsp lemon juice and 1 tsp salt (adjust to taste). Mix gently to coat all pieces without breaking them. Cook for another 3–4 minutes so flavors meld; if mixture seems dry, add 1–2 tbs water.
Final seasoning
Stir in 1 tsp garam masala and cook for 30 seconds. Taste and adjust salt, chili, or tang (lemon/amchur) as needed.
Garnish and serve
Turn off the heat. Sprinkle chopped cilantro (2 tbs) over the bhindi masala and gently mix. Transfer to a serving bowl and serve hot with lemon wedges on the side.
