Prepare honeydew juice
Cut about 1 cup of ripe honeydew into cubes. Purée in a blender until very smooth, then strain through a fine mesh sieve into a bowl to remove pulp. Measure 1 ounce (about 30 ml) of the strained honeydew juice. (If you prefer, use very cold store-bought melon juice.)
Muddle serrano
In a cocktail shaker, place the seeded half-serrano (0.5 piece). Add the measured lime juice (0.75 oz) and honey syrup (0.5 oz). Gently muddle 3–4 times to release the chile oils and meld with the sweet-acid base. Do not over-muddle into a paste — you want aromatic heat, not too much bitterness.
Build and shake
Add the Roku Gin (1.75 oz), Green Chartreuse (0.5 oz), strained honeydew juice (1.0 oz), the serrano-lime-honey mixture from the shaker, and cracked black pepper (1 tsp) to the shaker. Add ice (about 1.5 cups or enough to fill shaker). Cap and shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosted. The vigorous shake helps integrate the Chartreuse and distribute the pepper.
Prepare glass
Optional: lightly wet the rim of a rocks or coupe glass with lime and dip into a small plate with a little cracked black pepper to create a peppered rim. Add 0.5 cup of fresh ice to a rocks glass if serving on the rocks; if serving up, simply chill the glass briefly or strain into a chilled coupe.
Double strain and serve
Double-strain the shaken cocktail (using a Hawthorne strainer and a fine mesh sieve) into the prepared glass over fresh ice (if on the rocks) or straight up into the chilled coupe. Double straining captures serrano seeds and larger pepper fragments while allowing the bright juice through.
Finish and garnish
Lightly grind a small pinch of cracked black pepper over the top (a whisper, about 1/16–1/8 tsp) to accent the aromatics. Garnish with a thin honeydew slice or melon ball perched on the rim and a single thin serrano slice floated on top (or skewered). Serve immediately.
Notes and adjustments
If you want less heat, remove the serrano completely or muddle only once and discard the chile. Adjust honey syrup to taste if your honeydew is very sweet or bland. Green Chartreuse is herbal and potent — the 0.5 oz adds complexity; reduce to 0.25 oz for a milder herbal note. Use freshly cracked pepper for the best aroma.
