Prepare and Sear Beef
Pat the roast dry with paper towels. Season evenly with 1 tsp salt and 1 tsp black pepper. Lightly dredge the roast in 2 tbsp flour, shaking off excess. Heat 1 tbsp vegetable oil in a heavy skillet or Dutch oven over medium-high heat until shimmering. Sear the roast 2–3 minutes per side until deeply browned on all sides. Remove the roast and set aside.
Deglaze and Build Gravy
Stir in 1 tbsp tomato paste and cook 1 minute. Pour in 2 cups beef stock, scraping up browned bits from the bottom of the pan with a wooden spoon. Add 2 tbsp demi-glace (if using), 1 tsp Worcestershire sauce, 1 tsp thyme leaves, and 1 bay leaf. Bring to a gentle simmer.
Braise the Roast
Return the seared roast to the pot, nestling it into the liquid. Cover with a tight-fitting lid and simmer gently on the stovetop over low heat for 45–55 minutes, or transfer to a 325°F (160°C) oven and roast 35–45 minutes, until beef reaches an internal temperature of about 125–130°F (for medium-rare) to 140°F (medium) depending on desired doneness. For a lunch portion, aim for medium (about 140°F) so it slices easily and remains moist. Remove beef to a cutting board, tent with foil and rest 8–10 minutes.
Finish Gravy
While beef rests, skim any excess fat from the surface of the cooking liquid. Bring liquid to a simmer and reduce 5–8 minutes to concentrate flavor if needed. If you want a thicker gravy, whisk 1 tsp cornstarch into 1 tbsp cold water to make a slurry and whisk into simmering sauce; cook 1–2 minutes until glossy and thickened. Adjust seasoning with salt and pepper to taste. Strain gravy into a clean saucepan if you prefer a smooth texture.
Slice Roast
Slice the rested roast thinly against the grain into portions suitable for a lunch plate (4–6 slices, roughly 4–6 oz total depending on appetite). Keep slices warm in the gravy or briefly reheat in the sauce before plating.
Mashed Potatoes
Drain potatoes well and return to the hot pot for 1 minute to evaporate excess moisture. Mash potatoes using a potato masher or ricer until smooth. Add 1 tbsp unsalted butter and 1/4 cup warm milk; mash or stir until combined and creamy. Season with 1/4 tsp black pepper and additional salt to taste. Keep warm until plating.
Toppings & Finish
To serve: spoon a generous portion (about 1 cup) of mashed potatoes onto the plate. Arrange 4–6 slices of the braised roast over or next to the potatoes. Ladle 1/2 to 3/4 cup warm beef gravy over the beef and potatoes. Garnish with 1 tbsp chopped fresh parsley and serve pickled beets or sliced pickles (about 1/4 cup) on the side if desired.
