Make the spread

In a small bowl combine Dijon mustard, honey, mayonnaise, lemon juice and a pinch of black pepper. Whisk until smooth and set aside.

Assemble & Cook Sandwich

Prepare bread

Spread about half of the prepared honey-mustard mixture evenly on the inside face of each sourdough slice.

Layer filling

On one slice, arrange the sliced cheddar in an even layer, then place the ham on top of the cheddar. Add the Swiss cheese on top of the ham to create a cheese-ham-cheese stack. Cover with the second slice of bread, spread side down.

Butter the exterior

Spread the unsalted butter evenly over the exterior faces of both bread slices (the two outer sides of the assembled sandwich). This will help achieve a golden crust when cooking.

Pan-toast the sandwich

Heat a nonstick or cast-iron skillet over medium-low to medium heat. Place the sandwich in the skillet. Cook for 3 to 4 minutes on the first side until golden brown and the cheese begins to melt. Use a spatula to press gently occasionally to ensure even contact.

Flip and finish

Carefully flip the sandwich and cook the second side for another 3 to 4 minutes until golden brown and the internal temperature is hot and cheeses are fully melted. If the bread is browning too quickly before the cheese melts, reduce heat to low and cover the skillet with a lid for 1–2 minutes to trap heat and encourage melting.

Rest and slice

Transfer the sandwich to a cutting board and let rest for 1 minute (this helps prevent cheese from running out). Slice in half on the diagonal and serve immediately with pickle slices and potato chips if using.
