Method
Jalapeño Simple Syrup
Make syrup
Combine 1/2 cup sugar and 1/2 cup water in a small saucepan. Split the jalapeño lengthwise, leaving seeds in if you want more heat, and add it to the pan. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Simmer for 4 minutes, then remove from heat and let steep 15–30 minutes off heat until it reaches desired spiciness.
Strain out the jalapeño and let the syrup cool to room temperature. Transfer to a bottle and refrigerate. Use 1/2 oz per cocktail; leftover syrup keeps up to 2 weeks refrigerated.
Cocktail Assembly
Prepare the glass
Rub the lime wedge around the rim of a chilled coupe or rocks glass. Dip the rim into the coarse salt or smoked paprika + salt mix to coat. Add 1 cup of crushed or cubed ice to the glass if serving over ice.
Dry shake (if using egg white)
In a cocktail shaker, add 2 oz vodka, 3/4 oz fresh lime juice, 1/2 oz ginger liqueur, 1/2 oz jalapeño simple syrup, 1/4 oz orange curaçao, 1/2 oz egg white (optional), and 2 dashes Angostura bitters. Seal the shaker and shake vigorously without ice for 15 seconds to emulsify the egg white and incorporate foam.
Wet shake
Add 6 ice cubes to the shaker and shake hard for 12–18 seconds until the shaker is very cold to the touch (this chills and dilutes properly).
Strain & serve
Double-strain the cocktail into the prepared glass (over ice if used, or neat in a coupe). If you omitted the egg white, just shake with ice and strain. Finish by adding an additional 1–2 dashes Angostura bitters on the foam (if present) and use a toothpick to create a small pattern if desired.
Garnish
Float a thin jalapeño slice on top and add an orange twist on the rim or floated beside the pepper. Serve immediately.
