Prepare produce and proteins

Wash and dry the lettuce leaves; pat them dry with paper towels. Slice the tomato into 1/4-inch thick rounds (about 6 slices). Season tomato slices lightly with about half of the kosher salt and half of the pepper. If bacon is not cooked, cook bacon in a skillet over medium heat until crisp, about 6–8 minutes, then drain on paper towels.

If you prefer warmed bread, lightly butter one side of each bread slice with the softened unsalted butter. Spread mayonnaise on the non-buttered side of 4 bread slices (these will be the interior-faced sides). If using Dijon mustard, mix it into half the mayonnaise (about 3 tsp) and spread on 2 of the mayonnaise-coated slices for a bit of tang.

Toast (optional)

Heat a griddle or large skillet over medium heat. Place the buttered sides of the 6 bread slices down on the griddle and toast until golden brown, about 1–2 minutes per side. Remove and keep warm. Alternatively, use a toaster and then butter the toasted bread lightly.

Assemble Club Sandwich

First layer (bottom to middle)

Lay 1 slice of toasted bread, mayo side up, on your work surface. Top with 2 oz turkey (about one-third of the turkey), one lettuce leaf (or a piece torn to fit), and one tomato slice. Place a second slice of toasted bread, mayo side down, on top of the tomato to create the first tier.

Second layer (middle to top)

On top of the second bread slice (mayo side up), layer 3 slices of bacon (or 2 if very large), 2 oz ham, and 1 slice of cheese. Top with another lettuce leaf. Finish with the final slice of toasted bread, buttered side out.

Press down gently to compact the sandwich slightly. Insert two wooden sandwich picks or one long pick through each quarter to hold layers. Trim the sandwich diagonally into quarters (cut across both diagonals to make four triangular quarters) and serve with pickle spears or chips on the side.

Seasoning & Service

Taste one cut edge and, if desired, sprinkle a small pinch of the remaining salt and pepper between layers before serving. Serve immediately while bread is warm and bacon is crisp.
