Chill cheese for clean cuts
Place the cheddar blocks in the refrigerator for at least 30 minutes before cutting. Cold cheese firms up and yields cleaner, neater cubes.
Cut cheese into cubes
Working on a clean cutting board, trim any rind or uneven edges from the cheddar blocks. Cut the larger block into uniform cubes approximately 3/4 inch (2 cm) per side. Repeat with the extra-sharp cheddar to create color/texture contrast. Aim for roughly 24 cubes total.
Uniformity check
If some cubes are slightly larger or smaller, trim or pair them so presentation is consistent on the serving platter.

Light seasoning
Place the cheese cubes in a shallow bowl or on a tray. Sprinkle the sea salt, black pepper, and smoked paprika evenly over the cubes. Toss gently with your hands or use two spoons to turn the cubes so the seasoning adheres without breaking them.
Toothpicks
Insert a toothpick into each cube if serving as an appetizer to make them easy to pick up. Alternatively, arrange cubes on a platter next to crackers and fruit slices.
Plating & Serving
Arrange the cheddar cubes on a serving platter. Alternate colors (sharp and extra-sharp) for visual interest. If using accompaniments, fan apple slices around the cheese, cluster tomatoes, and place crackers in a separate pile so they stay crisp.
Serve immediately at cool room temperature (about 15 minutes after removing from refrigerator) for best flavor. If not serving right away, keep refrigerated and remove 10–15 minutes before serving.
