Preheat and prep

Preheat your waffle iron according to manufacturer instructions to medium-high heat. Lightly brush or spray the cooking surfaces with 1 teaspoon of neutral oil or nonstick spray; reapply as needed between batches.

Mix dry ingredients

In a large bowl whisk together 2 cups all-purpose flour, 2 tablespoons granulated sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt until evenly blended.

Combine wet ingredients

In a separate bowl or large measuring cup whisk 2 large eggs until frothy. Add 1 1/2 cups whole milk, 1/4 cup melted unsalted butter (cooled slightly), and 1 teaspoon vanilla extract. Whisk until combined.

Make batter

Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined — small lumps are fine. Do not overmix. If batter seems very thick, add up to 2 tablespoons additional milk to reach a pourable but slightly thick consistency.

Rest (optional)

Let the batter rest 5–10 minutes at room temperature to allow the baking powder and soda to activate and the batter to hydrate; this improves texture.

Cook Waffles

When waffle iron is hot, lightly oil the surface with remaining neutral oil (about 1 tablespoon divided across uses) or spray. Pour batter onto the center of the iron — amount will depend on waffle iron size (typically 1/2 to 3/4 cup for standard irons). Spread slightly if needed but avoid overflowing. Close lid and cook until steam largely subsides and waffles are golden brown and crisp, usually 3–5 minutes. Remove carefully and keep warm on a baking sheet in a 200°F (95°C) oven while you cook remaining waffles. Re-oil iron as necessary between batches.

If making chocolate chip waffles: sprinkle 1–2 tablespoons chocolate chips onto the batter in the iron immediately after pouring batter, then close and cook as above.

Wash and slice strawberries (about 1 cup), measure 1/2 cup blueberries and slice 1 banana. Warm maple syrup slightly if desired. Arrange fruit, chocolate chips (1/2 cup), honey (1/4 cup), and whipped cream (1 cup) in small bowls for a build-your-own station.

Cook bacon until crisp, then drain and chop into bite-sized pieces (use 6 slices). Fry or prepare up to 4 eggs to desired doneness (sunny-side-up or over-easy). Shred 1 cup cheddar. Thinly slice smoked salmon and finely chop chives. Set sour cream (1/2 cup) in a small bowl. Arrange savory toppings for assembling savory waffles.

Assemble and Serve

For sweet waffles: place a waffle on a plate, add a small pat of butter (1/2 tablespoon), top with sliced strawberries, blueberries, banana, and a sprinkle of chocolate chips if desired. Drizzle with maple syrup or honey and finish with a dollop of whipped cream.

For savory waffles: place a waffle on a plate, spread a spoonful of sour cream or a thin smear of butter if desired, sprinkle shredded cheddar so it begins to melt on the warm waffle, add chopped bacon and a fried egg on top. For smoked salmon variation, top a waffle with a smear of sour cream, smoked salmon slices, and finish with chopped chives.
