Breading station
In a shallow bowl combine 1 cup breadcrumbs, 1/4 cup grated Parmesan (if using), 1/2 tsp paprika, 1/2 tsp garlic powder, and 1/2 tsp dried parsley or Italian seasoning. Stir to combine and break any lumps.
Wet coating
In a second shallow bowl whisk together 2 large eggs, 3 tablespoons milk or buttermilk, and 1/2 tsp hot sauce (optional) until smooth and slightly frothy.
Lightly dredge each mushroom in the flour, shaking off excess. Dip the floured mushroom into the egg mixture, letting excess drip back into the bowl. Finally press the mushroom into the breadcrumb mixture, coating evenly on all sides. Place breaded mushrooms on a wire rack while you finish coating the rest to maintain crispness.
For an extra-crisp double coating (optional): after the first breadcrumb coat, return the mushroom to the egg mixture and then again to the breadcrumbs for a thicker crust.
Frying / finishing
Pour about 1 cup neutral oil into a large skillet to reach roughly 1/4 inch depth (or enough for shallow frying). Heat over medium-high until oil temperature reaches 350°F (175°C) or a small breadcrumb sizzles immediately when dropped in.
Serve warm with lemon wedges and a sprinkle of chopped fresh parsley. These are also excellent with dipping sauces such as ranch, aioli, or marinara.
Baking / air-fryer alternative
Oven-baked
Preheat oven to 425°F (220°C). Arrange breaded mushrooms on a parchment-lined baking sheet sprayed lightly with oil. Spray tops lightly with cooking oil spray. Bake 12–18 minutes, flipping halfway, until golden and crisp.
Air-fryer
Preheat air fryer to 400°F (200°C). Place mushrooms in a single layer (work in batches) and cook 8–12 minutes, shaking or turning halfway, until crisp and browned.
