Form and season
Place the 1/3 lb ground beef in a bowl. Handle it as little as necessary to avoid overworking. Gently shape into a round patty about 3.5–4 inches (9–10 cm) in diameter and roughly 3/4 inch thick. Make a shallow 1/2 inch indentation in the center of the patty with your thumb to reduce doming while cooking. Lightly brush both sides of the patty with 1 tsp neutral oil.
Season both sides of the patty immediately before cooking with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper. If using, sprinkle 1/2 tsp Worcestershire sauce onto the top surface and spread gently — do not overwork the meat.
Preheat grill or skillet
Preheat a grill or heavy skillet (cast iron preferred) over medium-high heat for 5 minutes. If using a skillet, add a light film of neutral oil and heat until shimmering but not smoking. The cooking surface should register about 375–425°F (190–220°C) if you have an infrared thermometer.
Cook the patty
Place the patty on the hot grill or skillet. Cook uncovered for 3–4 minutes until a deep brown crust forms on the bottom. Flip once using a spatula and cook the second side for 3–4 minutes for medium doneness (internal temperature ~145–150°F / 63–66°C). For medium-well cook 4–5 minutes per side; for medium-rare 2.5–3 minutes per side. If adding cheese, place the slice on the patty about 1 minute before removing from the heat and cover briefly to melt.
After cooking, remove the patty to a plate and tent loosely with foil. Let rest 3–5 minutes to allow juices to redistribute.
