Burger Patties
Form the patty
Gently shape the 1/3 lb (0.333 lb) ground beef into a single round patty about 3.5 to 4 inches in diameter and roughly 3/4 inch thick. Handle the meat as little as possible to avoid compacting it. Make a shallow dimple in the center with your thumb to help the patty cook flat.
Season
Season both sides of the patty with kosher salt (about 1/2 tsp) and freshly ground black pepper (about 1/4 tsp) evenly. Do this immediately before cooking so juices aren’t drawn out.
Preheat and oil
Heat a cast-iron skillet or griddle over medium-high heat until shimmering, about 3–5 minutes. Add 1 tablespoon neutral oil and spread to coat the surface.
Cook the patty
Place the seasoned patty on the hot skillet. Cook undisturbed for 3 to 4 minutes until a brown crust forms. Flip once using a spatula and cook the second side for 3 to 4 minutes for medium (internal temperature ~ 160°F/71°C for ground beef). If you want it more well done, cook 1–2 minutes longer.
Add cheese
About 30–45 seconds before the patty is done, place the slice of cheddar cheese on top of the patty. Cover the pan briefly with a lid or an inverted baking sheet to help the cheese melt, about 30–45 seconds.
Rest
Remove the patty from the skillet and let it rest on a plate for 1–2 minutes while you prepare the bun and condiments. Resting helps redistribute juices.
Buns & Cheese
Toast the bun: While the patty rests (or in a second skillet if preferred), spread 1/2 tablespoon softened butter evenly on the cut sides of the bun. Place the buns butter-side down on the hot skillet or griddle (same pan after removing patty works well) and toast until golden and crisp, about 45–60 seconds. Remove from heat.
Toppings & Condiments
Assemble condiments: Spread 1 tablespoon mayonnaise on the bottom bun and 1 teaspoon yellow mustard on the top bun (or adjust to taste).
Layer toppings: On the bottom bun, place the leaf of lettuce, then the cheese-topped patty. Top the patty with 2 tomato slices, 3 rings of thin-sliced red onion, and 3 pickle slices. Cap with the top bun.
Serve: Serve the 1/3 lb Nest Burger immediately while hot, with fries, chips, or a side salad as desired.
