Trim and Dry

Pat the thighs and drumsticks very dry with paper towels. Tuck any loose skin under or trim excess fat. Dry skin helps achieve crispness.

If time allows, refrigerate the pieces uncovered on a rack for 30–60 minutes to further dry the skin (optional).

Seasoning and Marinade

In a small bowl, combine kosher salt, black pepper, paprika, garlic powder, onion powder, dried thyme, and optional cayenne. Mix thoroughly to create a dry rub.

Zest the lemon and squeeze 1 tablespoon of juice into the olive oil. Add the lemon zest and olive oil to the dry rub and stir until it forms a paste (the oil helps the rub adhere and promotes browning).

Rub the seasoning paste all over each thigh and drumstick, getting some under the skin where possible for more flavor. Ensure even coverage. Let the seasoned pieces sit at room temperature for 20–30 minutes, or refrigerate up to 4 hours for a deeper flavor (if refrigerating, bring back to room temperature 30 minutes before roasting).

Preheat the oven to 425°F (220°C). Position a rack in the center of the oven.

Arrange the optional aromatics (quartered onion, smashed garlic cloves, carrot and celery pieces) in a single layer in a roasting pan or a rimmed baking sheet. Place a wire rack on top of the pan if you have one; place the chicken pieces skin-side up on the rack. If you don't have a rack, place the chicken directly on top of the aromatics so air can circulate a bit.

Place the chicken in the preheated oven. Roast at 425°F (220°C) for 35–45 minutes, depending on piece size. Start checking at 30 minutes. You're looking for an internal temperature of 165°F (74°C) measured at the thickest part of the thigh without touching bone, and skin that is golden-brown and crisp.

If the skin is browning too quickly, tent loosely with foil; if it isn't browning enough, switch to broil for 1–2 minutes while watching closely to avoid burning.

Finish and Rest

When the chicken reaches 165°F (74°C), remove the pan from the oven. Brush the pieces with the optional melted butter and a squeeze of the remaining lemon juice for gloss and flavor.

Transfer the chicken to a cutting board and let rest uncovered for 8–10 minutes. Resting allows juices to redistribute and ensures moist meat.

Scatter chopped fresh parsley over the chicken and serve. Spoon any pan juices over the pieces or strain into a small gravy if desired.
