Dough Preparation

Mix Dry Ingredients
In a large mixing bowl, combine 4 cups of all-purpose flour, 1 cup of granulated sugar, 2 teaspoons of instant yeast, and 1 teaspoon of salt. Whisk together until evenly mixed.

Heat Milk and Butter
In a small saucepan, heat 1 cup of milk and 1 stick of unsalted butter over low heat until the butter melts. Remove from heat and let it cool slightly.

Combine Wet Ingredients
In a separate bowl, beat 2 large eggs and then add the cooled milk-butter mixture and 1 teaspoon of vanilla extract. Mix until well combined.

Pour the wet ingredients into the dry ingredients. Stir until a dough forms. If the dough is too sticky, add a little more flour, one tablespoon at a time.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until the dough is smooth and elastic.

Place the kneaded dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1-2 hours, or until it doubles in size.

Shape the Dough
Once the dough has risen, punch it down to release the air. Roll it out on a floured surface to about 1/2 inch thick. Cut out circles using a cookie cutter or glass, about 3 inches in diameter.

Place a small spoonful (about 1 teaspoon) of fruit jam or jelly in the center of half of the circles. Leave the edges clear.

Top each filled circle with another circle of dough. Pinch the edges together to seal well. Ensure there are no gaps.

Place the filled doughnuts on a baking sheet lined with parchment paper. Cover with a towel and let them rise for another 30-45 minutes.

In a deep saucepan or fryer, heat oil to 350°F (175°C). Use enough oil to submerge the doughnuts.

Carefully place the doughnuts in hot oil, a few at a time, and fry for about 2-3 minutes per side, or until golden brown.
