Prepare the vegetables

Wash and chop all vegetables as specified in the ingredients list.

Make the sauce

In a small bowl, mix together fermented soybeans, grated ginger, sesame oil, soy sauce, rice vinegar, and chili flakes until well combined.

Cooking

Wok char the vegetables

Heat a wok over high heat until it's smoking. Add a splash of sesame oil and then add the prepared vegetables. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.

Add the sauce

Pour the sauce over the charred vegetables and stir well to coat. Cook for an additional 2-3 minutes to heat the sauce through.

Serving

Garnish and serve

Remove the vegetables from heat, sprinkle with sesame seeds and chopped green onions, and serve immediately.
