Heat a large skillet over medium-high heat. Add olive oil and butter. When butter foams, add diced onion and cook 2 minutes until translucent.

Season with smoked paprika, garlic powder, kosher salt, and black pepper. Stir to combine and cook 1 more minute to toast spices. Taste and adjust seasoning. Stir in chopped parsley if using. Keep warm while making omelet.

Heat omelet pan: return skillet to medium-low and add 1 tablespoon unsalted butter. Swirl until butter coats the pan and begins to foam but not brown.

Cook eggs: pour the whisked eggs into the pan. Using a silicone spatula, gently stir the eggs in the center for about 10–15 seconds to set, then tilt the pan and let the eggs set around the edges. Repeat gentle stirring/tilting until mostly set but still slightly moist on top (about 1–2 minutes total).

Add fillings: sprinkle the warmed country ham evenly over one half of the omelet, then top with the shredded Swiss cheese.

Fold and finish: using the spatula, carefully fold the empty half over the fillings to form a half-moon. Let cook 30–60 seconds more to allow cheese to melt and interior to finish. If desired, cover briefly (10–15 seconds) to encourage melting, then remove from heat.

Plate and garnish: slide omelet onto a plate, sprinkle with chopped chives if using. Serve immediately alongside home fries and a warm buttermilk biscuit brushed with melted butter.
