Fish & Chips Recipe
Double portion of local lager-battered haddock, fried golden brown on a bed of Highfries. Served with house tartar sauce.

Method
Preparation of Tartar Sauce
In a bowl, combine mayonnaise, chopped dill pickles, capers, lemon juice, and fresh dill. Mix well and refrigerate until serving.
Preparing the Fries
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, and sprinkle with salt to taste.
Cooking the Fish
In a mixing bowl, whisk together the flour, baking powder, salt, and pepper. Gradually add the local lager until the batter is smooth.
Dip each haddock fillet into the batter, allowing excess to drip off.
Carefully place the coated fillets into the hot oil and fry for about 4-5 minutes, or until golden brown and cooked through. Remove and drain on paper towels.
Serving
Serve the crispy fish on a bed of fries with a side of house tartar sauce.
