Cut and freeze

Trim the mozzarella into uniform sticks about 3 inches long, 3/4 inch wide and 1/2 inch thick (yields ~12–16 sticks from 1 lb). Place the sticks on a parchment-lined tray in a single layer, cover lightly with plastic wrap, and freeze at least 1 hour (preferably 1.5–2 hours). Freezing prevents excessive cheese leakage when frying.

Set up three shallow bowls or pie plates: Bowl 1 — flour mixed with cornstarch and 1/4 tsp salt. Bowl 2 — whisk together the eggs and milk until smooth. Bowl 3 — combine breadcrumbs, grated Parmesan, Italian seasoning, garlic powder, onion powder, smoked paprika, remaining 1/4 tsp salt and black pepper; mix well.

For extra-crisp coating (recommended): dredge each frozen mozzarella stick first in the flour mixture (shake off excess), then dip into the egg mixture, then roll in the breadcrumb mixture pressing firmly to adhere. For the most secure coating, return the breaded stick to the egg and breadcrumb again for a double-coat, then place on a parchment-lined baking tray. Keep the tray in the freezer for 15–20 minutes before frying to firm up the coating.

Frying

Pour the oil into a heavy-bottomed pot or deep fryer to a depth of about 2 inches (roughly 2–3 cups depending on vessel). Heat the oil to 350°F (175°C). If you don't have a thermometer, test with a small breadcrumb — it should sizzle and brown in about 30–45 seconds.

Fry the mozzarella sticks in small batches (do not overcrowd) for 1 to 1 1/2 minutes, turning once, until golden brown. Monitor closely: overcooking or oil that is too hot will cause the coating to brown too fast and the cheese to burst out. Maintain oil temperature around 350°F by adjusting burner as needed.

Using a slotted spoon or spider, transfer fried sticks to a wire rack set over a sheet pan or to paper towels to drain for 1–2 minutes. Serve immediately so cheese remains gooey but contained.

Baking alternative (optional)

If you prefer baked mozzarella sticks: preheat oven to 425°F (220°C). Place coated sticks on a parchment-lined baking sheet and spray lightly with oil. Bake 8–10 minutes until golden, then broil 30–60 seconds to deepen color — watch carefully to avoid bursting. Let rest 1–2 minutes before serving.
