Wash and cut

Wash the potatoes thoroughly to remove dirt. Peel if you prefer (leaving the skin on adds texture). Cut each potato into 1/4- to 3/8-inch thick sticks for classic fries. Try to keep pieces uniform for even cooking.

Rinse and soak

Place cut fries in a large bowl of cold water and rinse to remove surface starch. Then cover them with cold water and soak for at least 30 minutes (or up to 2 hours) in the refrigerator. This step improves crispness.

Dry and coat

Drain the potatoes and spread them on clean kitchen towels or paper towels. Pat completely dry. Put the dried fries in a large bowl, sprinkle with cornstarch and toss until lightly and evenly coated. The cornstarch helps create a crunchy exterior.

Heat oil

In a deep, heavy-bottomed pot or Dutch oven, add enough vegetable oil to reach about 2 inches up the sides (approximately 1.5 cups for a small batch). Heat the oil over medium heat until it reaches 325°F (163°C). If you don't have a thermometer, test by dropping one small piece of potato — it should sizzle gently without browning quickly.

First fry (blanch)

Working in batches of about 10–12 fries (do not overcrowd), add the potatoes to the oil and fry for 4–5 minutes until they are soft and pale (no significant browning). Use a slotted spoon to transfer them to a wire rack or paper towels to drain and cool for 5–10 minutes.

Raise oil temperature

Increase the heat and bring the oil to 375°F (190°C). This higher temperature crisps the exterior without overcooking the interior.

Second fry (crisp)

Fry the blanched fries in batches again for 2–3 minutes, or until golden brown and crisp. Remove with a slotted spoon and drain on a wire rack or paper towels. Immediately season with salt and black pepper while still hot.

Finish

If using optional seasonings, toss hot fries with garlic powder and smoked paprika, and sprinkle with chopped parsley. Serve hot in a basket or bowl.

Garlic-parmesan option: after frying, toss fries with 1/2 tsp garlic powder and 2 tbs finely grated Parmesan (not listed above) for a savory finish.
