Method
Jalapeño Poppers
Prepare jalapeños
Wash jalapeños, slice in half lengthwise and remove seeds and membranes with a small spoon or paring knife. Wear gloves if desired to avoid skin/eye irritation.
Make filling
In a bowl combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt and black pepper. Mix until smooth and uniform.
Spoon or pipe the cream cheese mixture into each jalapeño half, filling them evenly but not overstuffing.
Set up a breading station: place flour in one shallow bowl, beaten eggs in a second, and breadcrumbs in a third.
Heat vegetable oil in a deep skillet or pot over medium-high heat to 350°F (175°C). Fry poppers in batches, 2–3 minutes per side, until golden brown and filling is hot. Use a slotted spoon to transfer to a paper towel-lined tray to drain. Alternatively, bake at 425°F (220°C) for 12–15 minutes until golden if you prefer less oil.
Let cool slightly before serving to avoid burns from hot filling.
Potato Skins
Bake potatoes
Preheat oven to 400°F (200°C). Scrub potatoes, dry, and prick each a few times with a fork. Rub with olive oil and sprinkle with a little salt. Place directly on the oven rack or a baking sheet and bake for 45–55 minutes until skins are crisp and interior is tender.
When cool enough to handle, cut each potato in half lengthwise. Scoop out most of the flesh, leaving about 1/4 inch of potato attached to the skin to hold shape. Reserve scooped potato for another use.
Brush the inside and outside of each potato skin with olive oil, then season with salt and pepper. Place skins on a baking sheet and bake at 425°F (220°C) for 10 minutes to crisp the edges.
Fill each skin with shredded cheddar and crumbled bacon (divide evenly). Return to the oven for 5–8 minutes until cheese is melted and bubbly.
Remove from oven, top with a dollop of sour cream and sprinkle with chopped chives. Serve hot.
Cheese Sticks
Prepare sticks
Cut mozzarella sticks in half if using full-length string cheese so pieces are about 2–3 inches. Freeze the cheese sticks on a tray for at least 30 minutes — this helps prevent melting too fast when frying.
Heat vegetable oil in a deep saucepan or fryer to 350°F (175°C). Fry cheese sticks in small batches 1–2 minutes until golden brown. Do not overcrowd. Remove with a slotted spoon and drain on paper towels.
Serve immediately with marinara sauce for dipping.
Breaded Mushrooms
Prep mushrooms
Wipe mushrooms clean with a damp cloth and trim stems as needed. Pat dry to remove excess moisture so breading adheres.
Combine flour, garlic powder and salt in a shallow bowl. Beat the egg in a second bowl. In a third bowl mix breadcrumbs and grated parmesan.
Dredge each mushroom first in the seasoned flour, then dip into beaten egg, then coat thoroughly with the breadcrumb-parmesan mixture. Press crumbs onto the mushroom to ensure they stick.
Assembly & Serving
Arrange jalapeño poppers, potato skins, cheese sticks and breaded mushrooms on a large platter, spacing items so they remain crisp. Add small bowls of ranch and marinara and garnish the platter with lime wedges and extra chopped chives if desired.
Serve immediately while items are hot and crispy. Provide napkins and small plates for guests.
