Coney Chili (quick stovetop)

Sauté aromatics and brown beef

Heat a medium skillet over medium-high heat. Add the ground beef and break it up with a spatula. Cook 3–4 minutes until it starts to brown. Add the 1/2 cup finely chopped onion and the minced garlic and continue to cook 2–3 minutes until the onion softens and the beef is fully browned. Drain excess fat if there's more than 1 tablespoon left.

Build the chili

Reduce heat to medium. Stir in the tomato paste, chili powder, cumin, paprika, Worcestershire sauce, salt, and black pepper. Cook 1 minute to bloom the spices. Pour in the beef broth and stir, scraping browned bits from the pan.

Simmer and thicken

Bring the mixture to a gentle simmer and cook 6–8 minutes, stirring occasionally, until slightly reduced. In a small bowl, mix the cornstarch with the 1 tablespoon cold water to form a slurry. Stir the slurry into the chili and simmer 1–2 more minutes until thickened. Taste and adjust seasoning (salt/pepper) if needed. Keep warm on very low heat while preparing hot dogs.

Toast buns (optional)

Heat a skillet or griddle over medium heat. Lightly butter the inside of each bun (about 1/2 tablespoon total). Place buns cut-side down and toast 1–2 minutes until golden. Remove and keep warm.

Cook hot dogs

There are three quick methods: (A) Grill: preheat grill to medium-high and cook 4–6 minutes, turning occasionally until heated through and slightly charred. (B) Pan-sear: place hot dogs in a hot skillet and cook 4–6 minutes, rolling to brown evenly. (C) Simmer/steam: place hot dogs in simmering water for 5 minutes. Use your preferred method and transfer hot dogs to toasted buns.

Assemble

Spread about 1 teaspoon yellow mustard inside each bun. Place one hot dog in each bun. Spoon a generous 1/2 cup (approximately) of the warm coney chili over each hot dog, letting chili cover the length of the dog. Sprinkle the finely diced raw onion evenly over the chili (about 1/4 cup per dog). If using, top with shredded cheddar (about 2 tablespoons per dog). Serve immediately.
