Cocktail Preparation
Chill a rocks glass by filling it with ice and set aside while you mix the cocktail.
Add aged rum (2 oz), freshly squeezed lime juice (0.75 oz), freshly squeezed grapefruit juice (0.5 oz), honey syrup (0.5 oz), Aperol (0.25 oz), and 2 dashes of orange bitters into a cocktail shaker.
Fill the shaker with ice (enough to three-quarters fill), cap it and shake vigorously for 10–15 seconds until the outside of the shaker is frosty and well-chilled.
Discard ice from the chilled rocks glass and add about 1 cup of cracked ice into the glass.
Strain the shaken cocktail over the cracked ice into the rocks glass using a Hawthorne or fine strainer to catch any small ice shards and pulp.
Express a grapefruit twist over the drink: hold the twist skin-side down over the glass and give it a firm twist to release the oils, then rub the rim with the twist and drop it into the cocktail or set it on the ice.
Garnish with a dehydrated lime wheel or a fresh lime wheel on the rim or floated on top.
Serve immediately. Sip slowly to enjoy the balance of bright citrus, gentle bitterness from Aperol, honeyed sweetness and the warm backbone of aged rum.
