Burger Patties & Seasoning

Form the patty
Gently shape the 8 oz ground beef into a round patty about 3/4 inch thick and slightly wider than the brioche bun. Avoid overworking the meat. Create a shallow dimple in the center with your thumb to reduce doming while cooking.

Season
Season both sides of the patty evenly with 1/2 tsp kosher salt, 1/4 tsp black pepper, and 1/4 tsp garlic powder just before cooking.

Cook the bacon
In a medium skillet over medium heat, add the 2 strips of thick-cut bacon and cook until crisp, turning occasionally, about 8–10 minutes. Remove to a paper towel-lined plate and keep warm. Reserve about 1 tsp of bacon fat in the pan if desired for extra flavor; discard the rest or save for another use.

Prepare greens and pickles
Rinse and dry 1/2 cup mixed greens and set aside. Lay out 4 dill pickle slices on a small plate ready for assembly.

Add cheese
When the patty is nearly finished cooking (about 1–2 minutes before desired doneness), place 1 slice smoked gouda on top of the patty. If using an optional extra cheese (cheddar, smoked gouda, or mozzarella), place it on top of or beneath the smoked gouda as desired so it melts together.

Make the burger sauce
In a small bowl, combine 1 tablespoon mayonnaise, 1/2 teaspoon yellow mustard, 1 teaspoon ketchup, and 1/4 teaspoon hot sauce (optional). Stir until smooth and adjust to taste.

Butter and toast the bun
Spread 1 tablespoon softened unsalted butter on the cut sides of the brioche bun. In a skillet over medium heat (or on a griddle), add 1 teaspoon neutral oil and toast the buns buttered-side down until golden and slightly crisp, about 1–2 minutes. Remove and keep warm.

Cook the patty
Heat a cast-iron skillet or heavy skillet over medium-high heat until hot. Add 1 teaspoon neutral oil (or reserved bacon fat) and place the seasoned patty in the pan. Cook 3–4 minutes on the first side without moving, then flip and cook another 3–4 minutes for medium (internal temperature ~140–145°F / 60–63°C). Adjust time for preferred doneness. During the last 1–2 minutes, add the smoked gouda (and optional extra cheese) so it melts.

Assemble the burger
Spread the prepared sauce on the bottom half of the toasted brioche bun. Place the cheesy burger patty on top. Lay the two bacon strips across the patty, followed by the mixed greens and the dill pickle slices. Spread a little softened butter or an extra smear of sauce on the top bun if desired, then cap the burger.

Serve
Transfer the assembled Hideaway Burger to a plate. Let it rest 1 minute, then serve immediately with your choice of side (fries, salad, or chips).
