Prepare cocktail

Combine ingredients

Add 2 oz añejo or reposado tequila, 0.5 oz mezcal, 0.75 oz sweet vermouth, 0.5 oz Averna (or other dark herbal amaro), 0.25 oz pure maple syrup, 2 dashes Angostura bitters, and 1 dash orange bitters into a mixing glass.

Add ice and stir

Fill the mixing glass with large ice pieces. Stir gently and steadily for 30–45 seconds (about 20–30 full rotations) until well chilled and slightly diluted. The mixture should be clear and cold to the touch.

Prepare serving glass

Place a single large ice cube or sphere in an old-fashioned glass. Strain the chilled cocktail into the glass over the large ice.

Express orange oil

Hold the orange peel skin-side down over the cocktail and give it a sharp squeeze to express the oils across the surface, then rub the peel around the glass rim and drop it into the drink.

Smoke and finish

Set up for smoking

Place 1 tablespoon of wood chips (apple, cherry, or hickory) in a small metal smoking tin, heatproof dish, or on a torch-safe surface. If using a smoking box or cloche, set the glass upside down nearby so you can quickly capture the smoke over the drink.

Ignite chips

Using a culinary torch or a long match, ignite the wood chips until they start to smolder and produce smoke. If using a handheld smoker, follow the device instructions to generate smoke.

Capture smoke

Invert the old-fashioned glass (or place the cloche) over the smoldering chips or direct the smoke into the glass using the smoker tube. Allow the glass to fill with smoke for 10–20 seconds for a light smoke, or up to 30 seconds for a stronger effect.

Seal and rest

Place the glass (with the ice and cocktail) over the smoking area or transfer the smoke-filled glass onto the serving glass to trap the smoke around the cocktail. Let it sit sealed for 20–30 seconds to infuse the beverage with smoke.

Serve

Remove the seal/cloche to release an aromatic plume. Optionally wave the cinnamon stick through the released smoke toward the guest for dramatic presentation. Serve immediately and advise the drinker to take in the aroma before sipping.
