Method
Main Sandwich
Prepare meat
If using steak: Season 1 lb shredded Angus steak with 1/2 tsp black pepper and 1/2 tsp salt. Heat 1 tablespoon olive oil in a skillet over medium-high heat, add the shredded steak and sear for 3–4 minutes until warmed through and slightly browned. If meat is raw roast or steak whole, slice thin, season and cook until medium then shred. If using cooked shredded chicken: toss 1 lb chicken with 1/2 tsp salt, 1/4 tsp black pepper and 1 tsp smoked paprika. Warm in skillet with 1 tablespoon olive oil over medium heat for 3–4 minutes until heated through and slightly golden.
Sauté peppers & onions
In a separate large skillet, heat 1 tablespoon olive oil over medium heat. Add the thinly sliced onion, red bell pepper and green bell pepper. Sauté 6–8 minutes until softened and edges begin to caramelize. Add 2 minced garlic cloves, 1 tsp smoked paprika and 1/2 tsp onion powder; cook 30–60 seconds more until aromatic. Season with a pinch of salt and pepper to taste. Combine the cooked meat with the peppers and onions in the skillet and stir to incorporate; keep over low heat to stay warm.
Toast rolls & assemble
Preheat broiler or a skillet. Spread softened butter evenly on the cut sides of 4 hoagie rolls. Place under broiler or in skillet, buttered side down, until golden and toasted (1–2 minutes under broiler, 1–2 minutes in skillet). Divide the meat-and-pepper mixture evenly among the toasted rolls. Top each portion with a slice of Pepper Jack cheese; if you prefer melted cheese, place assembled sandwiches briefly under the broiler (30–60 seconds) or cover skillet with a lid until cheese melts.
Finish
Add optional pickles if desired. Serve with BBQ sauce on the side for dipping or drizzling.
Side
Prepare one chosen side. For french fries: bake or fry according to package or recipe instructions (typically 18–22 minutes at 425°F for oven fries, turning once) until golden and crispy; season with salt. For a side salad: toss 2 cups mixed greens with your preferred dressing and serve chilled.
